looking for something to go with crackers. i'm bored with cheese & summer sausage, cream cheese & raspberry chipolte. want something new & exciting for a party. thanks.

Sassy Chicken Enchilada Dip

3 cooked, boneless chicken
breast halves, shredded
2 (8 ounce) packages light
cream cheese, softened
4 green onions, chopped
1 (10 ounce) can diced
tomatoes with green chile
peppers 1 teaspoon minced garlic
1 teaspoon chopped cilantro
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon paprika

DIRECTIONS:
1. In a bowl, mix the shredded chicken, light cream cheese, green onions, diced tomatoes with green chile peppers, garlic, and cilantro. Season with chili powder, cumin, oregano, and paprika. Cover, and chill at least 2 hours

I KNOW THE FEELING.. EVERYONE WANTS TO HAVE AN EXCITING AND DIFFERENT PARTY...TRY THESE WITH YOUR CRACKERS..

Bacon, cut in half
Brown sugar
Waferly crackers

Wrap bacon around crackers. Sprinkle with brown sugar. Broil until bacon is done, BE CAREFUL!! MAKE SURE YOU DON'T BURN THE CRACKERS IN THE BROILER. I SUGGEST LIGHTLY PAN COOKING THE BACON FIRST.

OR

CHEESE AND SHRIMP

12 oz. cream cheese, softened
2 tbsp. mayonnaise
1 sm. onion, grated
2 tsp. Worcestershire sauce
1 tsp. lemon juice
1 1/2 to 2 c. fresh or frozen shrimp
1/2 12-ounce bottle of chili sauce
Assorted crackers

Process first 5 ingredients in blender until well blended. Spoon onto serving plate. Chill, covered, overnight. Combine shrimp and chili sauce in bowl; toss to mix. Chill, covered, overnight. Drain shrimp. Spread over cream cheese. Serve with crackers. Yield: 10 to 12 servings.

No kidding - this is the best dip ever! So easy to make and is from Paula Deen - no less! I made this for my family over Christmas and they swear it tastes just like a real BLT sandwich. One tip, it is easier to serve this if you layer in a casserole dish rather than a bowl.

BLT Dip
1 cup mayonnaise
1 cup sour cream
Iceberg lettuce, shredded
2 large vine-ripe tomatoes, chopped
1 pound lean bacon, cooked crisp and crumbled
Sea salt bagel chips

Combine the mayonnaise and sour cream in a small bowl with a snap-on lid. When well mixed, refrigerate until serving time. When ready to serve, place the mayonnaise mixture in a large serving bowl. Top with the lettuce, tomatoes and bacon. Serve with sea salt bagel chips.

Hot Artichoke and Crab Dip:

2 cans artichoke hearts, drained and chopped
2 can chopped green chili's
1 can drained and rinsed crab meat, or fresh crab meat
1 clove garlic finely minced
several drops of hot sauce
1/2 to 3/4 cup mayonaise to bind
2 cups of fresh parmesan cheese

Mix all ingrediants and put in pan. Bake at 400* oven until top is golden brown (approximately 25 minutes).

Serve with blue corn tortilla chips

Enjoy!

how about an old fashioned cheese ball? there are ton's of recipes, they are all pretty easy and require few ingredients, and what's not to love about cheese rolled in nuts? besides, they kind of fell out of fashion for a while, so they would be "new" now.

try taking an 8 oz package of cream cheese (softened), a can of chopped pineapple (thoroughly drained - put in cheese cloth & sqeeze out all liquid), 3 green onions (or scallions) finely chopped, and a teaspoon garlic powder, mix together well, allow to firm up a little in fridge, roll into a ball & then roll in chopped pecans or almonds. everyone loves this recipie of my mom's, and it is sooooooo simple!

Little Smokies with Jelly and BBQ Sauce-saute some garlic, add jelly, bbq sauce, red pepper flakes, hot sauce, season salt, simmer, then bake for 30 minutes.
ABC Spread-crumble some crispy bacon, toast some sliced almonds, grate some sharp cheddar, small dice red onion, cayenne, Tabasco, and mayo to make it spready

For a new years party a few years ago, i made mini homemade baked eggrolls that were awesome. Along with it i wrapped some shredded beef bbq (not a lot of sauce) in some wontons, went over pretty well

Italian Layered Dip Recipe courtesy Sharon Fleischhaker
Show: Food Network Specials

8 ounces cream cheese
6 ounces goat cheese
2 cloves fresh garlic, minced
6 ounces pesto
8 ounces sun-dried tomatoes, chopped*
*Note: if you use dehydrated tomatoes ? add a little water to them and allow them to rehydrate slightly.


Let cream cheese and goat cheese soften at room temperature. Mix cheeses together with minced garlic. Line a casserole dish with plastic wrap. Put 1/3 of the cheese mixture in the dish, spreading it evenly to the sides. Next, layer ingredients in the following order: the sun-dried tomatoes, 1/3 cheese mixture, pesto, and remaining cheese in the same manner. Cover with plastic wrap and chill for at least 1 hour.
To serve, turn upside down on a platter. Serve with crackers.

"Really" Onion Dip From Food Network Kitchens

3 medium onions, 2 left in their skins, and 1 peeled
1 cup plus 2 tablespoons extra-virgin olive oil
2 cups mayonnaise
1/2 cup sour cream
1 tablespoon white wine vinegar
2 teaspoons kosher salt
Freshly ground black pepper
Hot sauce, as needed
2 scallions (white and green), minced
Serving Suggestions: Lots of your favorite potato chips

Preheat the oven to 425 degrees F.
In a roasting pan, rub the 2 onions in their skins with the 2 tablespoons oil. Bake until squishy soft, turning them once, about 45 minutes. Set aside to cool completely. Peel the onions and set aside.
Meanwhile, finely dice the remaining onion. Preheat a large, heavy-bottomed skillet over medium-high heat. Add the remaining 1 cup oil and heat until hot. Add the diced onion and cook, stirring occasionally, until they just begin to lightly brown, about 5 minutes. Lower the heat to medium-low and continue to cook, stirring occasionally, until golden brown, about 18 minutes more. Strain the onions through a sieve over a bowl. Transfer the onions to a paper towel-lined plate and spread them into a single layer. Reserve 1/4 cup of the onion oil and let it cool completely. (Reserve the remaining oil for dressings or marinades.)
Puree the roasted onions in a food processor. Add the mayonnaise, sour cream, vinegar, and salt, and pulse until smooth. While the motor is running, drizzle in the 1/4 cup of reserved onion oil until incorporated. Season with pepper and hot sauce, to taste. Transfer the onion dip to a serving bowl and stir in the scallion. Refrigerate until very thick, about 3 hours or overnight.
When ready to serve top with the fried onions. Serve with chips.

Harry and Davis Chile....or any chile mixed with creamcheese....\yum. Or port wine cheese.....or.....anything that can fit on a cracker! Good luck! Happpy snacking!

You will need baby shrimp, cocktail sauce and a package of cream cheese.

mix shrimp and cocktail sauce. Pour mixture over cream cheese. Yummy!!
