Any vegetable oil. The extra virgin is the best oil for you, and some people have to get use to the taste - where the run of the mill vegetable oils do not have any unique flavor. The more expensive almond or sesame oils have their own flavor, but you wouldn't have them just hanging around. You can use butter too if you are completley out of oils.

Go to the grocery and get some more extra virigin. You can use standard olive oil too, or other oils I suppose, but the taste certainly wont be right, so Id take the few minutes to hit the grocery rather than waste the time preparing something thats going to taste nasty.

Canola oil is good for baking and is known as a nutritious oil it has been hybridized from rapeseed to yield a good all purpose cooking oil with a high monounsaturated fat content similar to olive oil. But if you do not have any other oils to finish what you are doing, use butter, margarine, or shortening as a substitute.

Are you making a salad? Go with the most taste-free oil you have.

Use vegetable oil. You won't get *quite* the flavor you were going for, but it'll still work.
