Meat Loaf is good and expands to serve more people than you
thought.
Spaghetti is good, if you have pasta hanging around your cupboard.
Cabbage rolls are another suggestion.
Shepherds pie is great if you have some frozen or canned peas and mashed potatoes for the topping.
Hamburgers are also a suggestion and you can use the spices from your hamburger helper and create a torpedo shape instead of the common patty. Hope you find something here to tempt your cooking talents.

Meat loaf is the best! Recipe as follows:

11/2 pounds ground beef
1 14oz can chopped tomatoes with oregano and garlic
5 slices platter bacon, chopped
1/2 yellow onion, chopped
1 package Garlic and Herb soup mix by Lipton
2 eggs
3 generous dashes Worcestershire sauce
1/2 cup Italian bread crumbs
Salt and Pepper to taste
Topping Sauce

Saute bacon, onion in skillet until cooked. Add tomatoes and cook down. Salt and pepper to taste. While mixture is reducing, mix remaining ingrediants except for Topping Sauce. Take half of the tomatoe mixture and blend with meatloaf mixture. Form loaf in baking pan. Make a slight indentation down the middle of the loaf.

Topping Sauce: remaining tomatoe mixture
1 Tablespoon dijon mustard
3 Tablespoons brown sugar

Mix thoroughly and put on top of meatloaf. Cover with foil and bake at 375 degree oven for 40 minutes. Remove foil and continue baking for last 15 minutes until browned. Let sit for 10 minutes before cutting into it.

Serve with mashed potatoes and green peas

Here's something easy and delicious - made it last night actually!

Heat a bit of olive oil and ad in some chopped garlic.

Add one to one and a half pounds of hamburger just as the garlic started to get golden.

As the hamburger is cooking cook a package of elbow macaroni as directed to al dente.

As the burger is browning, add in a few dashes of chili powder (add all spices to your taste), some cumin powder, a dash of cayenne and some nutmeg.

Then add in some finely chopped carrot (I use two carrots) and some chopped celery (also used two stalks, plus the leaves) and a bit of onion or shallot.

Next, add a can of crushed or dice tomatoes. Add the meat mixture to the cooked pasta. Viola - dinner is served!

I actually add a few slices of provolone, cheddar or good ole American sliced cheese to the top and heat at 400 defgrees for 15-20 minutes, then serve. Growing up, my family called this American Chop Suey. This is just one variation and it's exactly what I did last night.

Warning - this makes a LOT! But they leftovers are great and easily re-heated in the microwave.

My mom came across this recipe. It sound really bad but it's not. Give it a try...Hamburger Pie...Brown hamburger meat...Boil potatoes to mash...open a can of green beans, corn, and two small cans of tomato sauce. Put hamburger meat on bottom of casserole dish. Layer the canned goods and tomato sauce next. Then put mashed potatoes on top. ( Fix the mashed potatoes how you like them) Last...put some grated cheese on top and bake on 350 until cheese is melted. Serve with garlic bread. It's really good.
