I am not much of a cook, but I am trying to teach myself. I have about 1.5 lbs of thawed chicken breast at home that I want to cook tomorrow for dinner. Looking to try something on the healthier side that is so easy that I can do it. Anyone have a good recipe?

Chicken with Rice
This chicken and rice bake is easy to make and bake.
4 to 6 chicken pieces
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 1/4 cups boiling water
1/4 cup dry sherry
1/2 cup dry onion soup mix
1 1/3 cups converted rice
2 tablespoons chopped pimiento
melted butter
salt and pepper
paprika

In a 1 1/2 to 2-quart casserole, combine soup, boiling water, sherry, onion soup mix, rice, and pimiento. Brush chicken thighs with butter; season with salt. Place chicken on top of rice mixture. Cover and bake at 375° for 1 1/4 hours, or until chicken and rice are tender.
Chicken thigh recipe serves 4 to 6.

Crock Pot Chicken Fricassee
1 can cream of chicken soup

1/2 C. of water

1/2 C. onions chopped

1 t. paprika

1 t. lemon juice

1 t. rosemary

1 t. thyme

1 t. salt

1/4 t. black pepper

4 skinless, boneless chicken breasts

non stick cooking spray

Spray the crock pot with the non stick spray. Place chicken in the crockpot. Mix remaining ingredients together and pour over chicken. Cover and cook on low for 6 - 8 hours.

1 hour before serving prepare chive dumplings.

3 T. shortening

1 1/2 C. flour

2 t. baking powder

3/4 t. salt

3 T. chives fresh chopped or 2 1/2 T. dried

3/4 C. milk

Mix dry ingredients and cut in shortening. Add chives and milk and mix to combine well. Drop by teaspoons onto hot chicken and gravy. Cover and cook on high for 45 - 60 minutes.

Parmesan Chicken
1 tablespoons Dijon mustard
• 1/4 teaspoon white wine vinegar
• 1/8 teaspoon salt
• 1/8 teaspoon black pepper
• 2 skinless boneless chicken breast halves (4 to 5 ounces each)
• 1/4 cup panko (course bread crumbs)
• 1/4 cup finely grated Parmigiano Reggiano
• Parchment paper
• Cooking oil spray
Preheat oven to 450°F and line a baking sheet with parchment.
Whisk together mustard, vinegar, salt in a large bowl and add chicken breasts, tossing to coat well.
Add cheese, pepper and bread crumbs and combined well. Transfer to a shallow soup plate or pie plate.
Dredge chicken, 1 piece at a time, in crumbs, coating completely and pressing gently to help crumbs adhere, then transfer to baking sheet. Spray lightly with cooking oil spray. Bake in middle of oven until golden brown and cooked through, 15 to 20 minutes.
Per Serving: 235 Calories; 5g Fat (21.3% calories from fat); 2g Saturated Fat; 38g Protein; 6g Carbohydrate; trace Dietary Fiber; 90mg Cholesterol; 527mg Sodium. Exchanges: 1/2 Grain(Starch); 5 Lean Meat; 1/2 Fat; 0 Other Carbohydrates.

This is Very simple, but delicious:
Make a few cuts in the chicken breasts and put them for a couple of hours in a marinade consisting of:

1/4 cup Olive oil
1 fl oz Squeezed lemon
1 fl oz chopped parseley
1 fl oz chopped fresh coriander (cilantro)
1 teaspoon Salt
1 teaspoon ground Cumin
1 teaspoon paprika powder
1/2g ground Saffron (about 0.02 oz :)
1 clove of garlic, mashed
(and also, if you like it hot - add some chile paste, like sambal oelek or preferrably harissa)

Then you fry the chicken breasts, adding some of the marinade towards the end. (bringing it to a boil)

Serve with Couscous or rice and perhaps some green beans.
Add a small bowl of yoghurt and some (perhaps homemade) harissa to the table and rejoyce.

4 boneless chicken breasts, pounded flat
4 TBSP cream cheese with chives
8 strips bacon

Place 1 TBSP cream cheese in the middle of each flattened chicken breast. Roll up chicken using two strips of bacon to secure each. Bake at 350°F for 1 hour. Enjoy!

i love this; melt about 1/2-3/4 stick margarine .add 2 tbsp. dijon mustard and 1-2 tsp worchteshire(spl. i know)in another bowl mix about a cup of bread crumbs with 1/2 cup grated parm/romano. dip both sides of chicken in dijon mix then crumbs.drizzle any remaining dijon and crumbs over top. put on a cookie sheet,bake at 350 for 30-45 min. depending on thickness.serve this with rice pilaf(rice a roni brand is good) and salad. great meal.

Lost in the kitchen. Reminds me of that episode of "Married with Children" where Peg goes in the kitchen and asks which one of these things is the oven.

Cut the chicken up into 1 inch pieces. Saute over high heat with Italian dressing. Put pieces over a nice salad. Can't get easier than that!

I have one...you have your chicken breast I see already.. try this get some cream of chicken soup...put out by cambells, get some stuffing and provolone cheese... really good cheese.. or u could try mozzerella. anyway put chicken breast in baking dish pour cream of chicken soup on top add cheese.. then prepare stuffing and pour on top. bake 350. degrees until chicken is fully cooked and cheese is melted. really delicious and nutrious meal..
