You can make an amaretto sour by mixing it with sweet and sour mix. Also, it tastes good with a little cream added and served over ice.

Amaretto is sooooo good.. It is a great base for so many different drinks.. here are a few of my favorites.. check the link below for many more... you should have an Amaretto party...have fun!!!
Di Saronno Mimosa
2 oz Champagne
3/4 oz Amaretto Di Saronno® liqueur
2 oz orange juice
Italian Apple Martini
3/4 oz Amaretto Di Saronno® liqueur
1 1/2 oz DeKuyper® Sour Apple Pucker schnapps
3/4 oz Stoli® Vanil vodka
1 splash Rose's® lime juice
1 splash cranberry juice
Bare *** (the pineapple and peach really taste good w/ amaretto)
1/4 oz DeKuyper® Peachtree schnapps
1 oz Amaretto Di Saronno® liqueur
1/2 oz pineapple juice

I know you said you felt that the Amaretto was too sweet for you. It will be sweet no matter what you mix it with. I know it is getting warm out, But I would suggest Amaretto, Coffee, and Cream. If you feel like adding a couple other Liquors, my favorite drink would be a Screaming Orgasm. 1 oz Amaretto 1 oz Baileys 1 oz Kahlua or Starbucks Coffee liquor 1 oz Vodka (when mixing Vodka, it doesn't matter which one) over ice in a pint and fill the rest of the glass with Half and Half. Shake and enjoy! I love this drink! It will be sweet, and strong.

Broken Down Golf Cart: 1/2 oz Vodka, 1/2 oz Melon Liqueur, 1/2 oz Amaretto, Cranberry Juice to fill a Zombie Glass.
Alabama Slammer: 1/2 oz Vodka, 1/2 oz Sloe Gin, 1/2 oz Southern Comfort, 1/2 Amaretto, Orange Juice to fill a Zombie Glass. Garnish with Orange and Cherry.
God Father: 1 oz Scotch, 1/2 oz Amaretto in a Rock Glass
God Mother: 1 oz Vodka, 1/2 oz Amaretto in a Rock Glass
God Child: God Mother with Milk and a Cherry.

You can make a "Grilled almond", 2/3 Amaretto and 1/3 Baileys.
It's quite sweet.

ALABAMA SLAMMER
1 oz. Southern Comfort
1 oz. Amaretto
1/2 oz. sloe gin
Dash of fresh lemon juice
Mix in a cocktail shaker with cracked ice and strain into an iced highball glass. Garnish with a cherry or lemon slice.
GODFATHER
1 oz. scotch
1 oz. amaretto
Mix in cocktail shaker with cracked ice and strain into an iced old fashion glass.
Substitute vodka for scotch, and presto: a GODMOTHER.
FRENCH KISS
1/2 oz. amaretto
1/2 oz. creme de cacao
1/2 oz. irish cream liqueur
Carefully layer all ingredients into a shot glass.
