No ingredients for a meat marinade? Marinate the meat with your favorite vinegar and oil salad dressing.

Need a side dish for your meat and you're completely out of vegetables? Try sliced, sautéed fruit, such as apples or mangoes.

What if there's no wine to add to a sauce? Perhaps beer or fruit preserves might work equally well.

Crab cakes are famous , but not always practical or affordable. This quick and easy recipe uses ingredients that can be kept on hand for preparation on busy days.

salmon cakes

Serves: 2
Hands-on time: 10 minutes
Cooking time: 10 minutes


1 7-1/2 ounce can salmon, drained, skin removed
1/4 cup plain, dry bread crumbs
1/2 cup finely chopped red onion
2 tablespoons chopped fresh dill, or 1 teaspoon dried
1 egg, lightly beaten
1 tablespoon reduced-fat mayonnaise
2 teaspoons horseradish
vegetable oil cooking spray


Mix all the ingredients except the cooking spray in a medium-size bowl.
Form into 4 equal-size patties.
Coat a medium nonstick pan with the cooking spray; heat over medium-high heat.
Cook the salmon cakes on both sides until golden brown.

****ONE-DISH ROSEMARY CHICKEN AND WHITE BEANS (Makes 4 servings)

2 teaspoons olive oil
1-1/2 teaspoons dried rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper
8 skinless and boneless chicken thighs (about 1 pound)
1 (14.5-ounce) can stewed tomatoes, undrained
1 (15-ounce) can navy beans, rinsed and drained
1/4 cup pitted kalamata olives, chopped

Heat olive oil in a large skillet over medium-high heat.
Combine rosemary, salt and pepper; sprinkle over one side of chicken.
Place chicken in pan with seasoned side down, cook 3 minutes.
Reduce heat to medium and turn chicken. Add tomatoes and beans, cover and simmer 10 minutes or until chicken is done.
Stir in olives.

Mix together the ingredients the night before, a few hours in advance or just before baking.

Make endless variations using the same basic proportions of ingredients. For example, use Italian seasoning instead of poultry seasoning. Substitute other types of frozen vegetables for the peas. If desired, simplify the recipe by leaving out the sweet red pepper and sliced mushrooms; simply add an extra cup of frozen vegetables.

Chicken Strata a la King (makes 6 servings)

1/2 cup chopped sweet red pepper
1 teaspoon instant minced onion
2 tablespoons water
1 package (10 oz.) frozen peas
1 can (5 oz.) chunk chicken
1 can (4 oz.) sliced mushrooms, drained
1 1/2 teaspoons poultry seasoning
4 cups day-old bread cubes (6 to 8 slices)
6 eggs
1 1/2 cups skim or low-fat (1%) milk
In medium saucepan, stir together pepper, onion and water. Cover. Cook over medium heat, stirring occasionally until softened, about 6 to 7 minutes. Add peas. Cover. Cook, stirring occasionally to break peas apart, until mixture is heated throughout. Stir in chicken, mushrooms and seasoning.

In large bowl, stir together vegetables and bread cubes. Spoon into lightly greased 8 x 8 x 2-inch baking dish. In large bowl, beat together eggs and milk until well blended. Pour over bread. Cover with foil.

Refrigerate several hours or overnight OR bake immediately in preheated 350° F oven 30 minutes. Uncover. Continue baking until golden brown and knife inserted near center comes out clean, about 30 to 40 minutes more.

ITALIAN WHITE BEAN SOUP (Makes 4 servings)

Part of the beans and liquid in this soup is pureed to make a thicker, creamy texture.

2 (15.5-ounce) cans white kidney beans (cannellini) or Great Northern beans, drained and rinsed
4 cups non-fat, reduced sodium chicken broth, divided
1/2 cup chopped onion
3 cloves garlic, minced
1 (16-ounce) can whole tomatoes with no salt, undrained OR 4 to 6 fresh plum tomatoes, peeled and chopped
2 teaspoons dried basil
1/2 teaspoon dried thyme leaves
1/8 teaspoon white pepper

Combine one can of beans with two cups of the broth in a blender or food processor and blend until a smooth puree.
Transfer to a large saucepan. Stir in remaining ingredients.
Bring to a boil over high heat, then reduce heat and simmer, covered, about 10 to 15 minutes, or until beans and tomatoes reach desired tenderness.

SPEEDY PORK CASSOULET (Serves 4)

3 boneless pork chops, cut into 3/4-inch cubes
1 tablespoon vegetable oil
2 medium onions, chopped
2 cloves garlic, crushed
2 (15-ounce) cans great Northern beans, rinsed and drained
3/4 cup chicken broth
1/3 cup chopped sun-dried tomatoes packed in oil, drained
1 teaspoon dried rosemary, crushed
1 teaspoon dried thyme, crushed
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped parsley
1/4 cup seasoned breadc rumbs

Heat oil in a deep saucepan over medium-high heat.
Cook and stir onions and garlic until tender but not brown.
Add pork, cook and stir for 2-3 minutes or until lightly browned.
Stir in beans, broth, tomatoes, rosemary, thyme, salt and pepper. Bring to boiling; reduce heat, cover and simmer 10 minutes or just until pork is tender, stirring occasionally.
Spoon cassoulet into individual soup bowls. Sprinkle each serving with parsley and bread crumbs.

Ingredients:
1 Beef roast or Chicken - whole or cut up( you can use all one kind like legs or thighs.)
4 potatoes
2 carrots - cut in 4 inch pieces or so
1 can Cream of Mushroom Soup or Cream of Celery Soup
1/2 can water (use the soup can)


Directions:

Set crock pot on high. Combine all ingredients in crock; cook for 6 hours, or all day on low.

This recipe for Easy Crockpot Dinner serves/makes 4

4 Beef Cubes Steaks
Salt and Pepper to taste
Worcestershire Sauce, to taste
PREPARATION:
Makes 4 servings.
Spray a baking dish with Pam; throw in the cubed steak pieces and season with salt, pepper and Worcestershire sauce. Place in a 375 oven.

After 15 minutes I turned the pieces over and let cook another 15 minutes.

Fried Rice

ingredients: rice, an egg or two, salt and msg, soya sause

- fill up a normal bowl (the size you'd eat) with rice
- heat up your pan, add some oil
- crack the egg into the pan
- pour in the bowl of rice
- scramble them together nicely
- add some salt, msg, and soya sauce (add as much as you want - if you want ur food to be salty then add more! but if you don't like it salty add less)
- nicely mix them all together

- u're done in a time span of less than 10 minutes!
- for more servings, add more rice/eggs!
- if you want your fried rice to have more eggs then crack in two eggs per one bowl of rice

what kindda of dinner?? pastas are easy if you use store bought sauce...
