I've never heard of Cafe Express, but you can have this one in the meantime...
"Chicken Sandwiches" - 6 sandwiches
2 boneless, skinless chicken breast halves; finely chopped
1 tbsp. butter
1 tsp. chili powder
1/2 tsp. ground cumin
1 clove garlic; minced
Dash cayenne pepper
1 (3 oz.) pkg. cream cheese; softened
1/2 cup shredded sharp Cheddar cheese
1/4 cup sour cream
1 (10 oz.) can diced tomatoes and green chile peppers; drained
2 green onions (scallions); thinly sliced
2 tbsp. snipped fresh cilantro (parsley)
12 slices white sandwich bread; crusts removed (or six 8" flour tortillas)
Avocado slices, cucumber slices, or tomato slices (optional)
12 leaves Bibb or green leaf lettuce
In large skillet, cook chicken in hot butter until lightly browned and no pink remains. Stir in chili powder, cumin, garlic and cayenne; cook 1 minute more. Cool slightly.
In medium mixing bowl, beat cream cheese, Cheddar and sour cream until creamy and combined. Fold in chicken mixture, drained tomatoes and peppers, green onions and cilantro. Cover and chill up to 24 hours.
Spread mixture onto 6 slices of bread; top with avocado, cucumber, or tomato slices if you wish. Add lettuce and remaining 6 slices of bread. (Or spread chicken mixture evenly over tortillas; top with lettuce, and avocado, cucumber, or tomato slices. Roll up tortillas.)

San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.
