Bread gets stale because the starch turns into sugar when it is left out. this process is known as starch retrogrodation. the moisture content is increased because sugar is a hydroscopic substance which means it absorbs guess what? that's right water. so it isn't because of the common false assumption that it's moisture loss but the exact opposite.
