Arugula... is an Italian green leaf vegetable (like lettuce), dark green, but very distinctive. It is an acquired taste. It has a peppery flavour, and when the leaves are smaller and new, they are mildier. When they are older leaves the hotter they get.

If you dont like hot peppery flavour, use watercress instead. Watercress is still peppery, but doesn't have the heat and fire that Arugula does.

I have one recipe that calls for it. I can never find it in my grocery store, so this summer, I bought seeds and grew it myself out on the patio..it is a very unique, interesting flavor, you must try it for yourself. I will grow it again next summer because it's so hard to find!
