My husband is also a shift worker, so finds it hard to eat at certain times and go to the gym at certain times. So, eat wisely, lots of chicken & fish. When you're at home (daylights & 3-11, or however your shift works) don't eat 2 or 3 hours before bed. Eat 5 or 6 small meals a day. As far as working out, you need an eliptical machine, it's much better on your knees.

Just in general it is helpful to eat, when possible, in a way that will maintain available food in your system. If not possible, you'll certainly need to eat a little more when you can eat. Try to eliminate simple carbs and sugars, and eat high fibers. If you are strength training and need protein, protein shakes and bars are always quick and convenient.

You don't necessarily have to always work out at the same time of day. It just helps maximize your efficiently in terms of improvement (because you're working out again as soon as you can). You generally shouldn't work the same muscles two days in a row if the muscles are sore because then one of the workouts is basically wasted. Cardio can be done anytime. It's just a matter of falling into a pattern that works for you.

A lot of exercises will be tough on the knees. Try to keep good form and put the work into the muscles, not the joints. I would definitely recommend going to a trainer for a bit, though. Someone there, with knowledge of the available machines, would be able to help most with working around your knees.

I never worked out and lost 30lbs...you don't need to exercise to lose weight...you just have to eat less.
