Generally, a frying technique that uses egg is a three-part process:
1. Dip the food in flour. This adds a layer of material for the egg to adhere to
2. Dip the floured material in egg (egg with a little water added)
3. Dip the wet material in another dry medium (could be flour or corn flakes or breadcrumbs...)

This creates a substantial "batter" for your fried goods. Enjoy!

Depending on how you want the final product to look you can use either method. If you dip the product you are cooking in eggwash then flour you will get a crisp finish with little flour buildup and the product will also crisp up a bit.. If you make a batter it will be crisp but thicker and the batter will brown but not the product you are deep frying.
