Blueberry Gingerbread Pancakes

Ingredients:

2 cups flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground ginger
3/4 teaspoons pumpkin pie spice
1/4 teaspoons baking soda
1/4 teaspoons salt
3/4 cup light molasses
3/4 cup buttermilk
2 eggs
3 tablespoons vegetable oil
2 cups blueberries
additional vegetable oil
butter and maple syrup

Preparation:

Mix first six dry ingredients in medium bowl and blend well.

In a large bowl, whisk molasses, buttermilk, eggs and 3 tablespoons vegetable oil. Add dry ingredients and whisk just until smooth. Fold in blueberries.

Brush nonstick skillet with vegetable oil. Allow 3 tablespoons batter for each pancake. Cook about a minute and a half on each side. Keep warm in 200 degree oven. Serve with butter and maple syrup.

I cook mine with Vanilla extract and brown sugar in the mix. My son eats pancakes 4 or 5 times a week. I make a big batch and just reheat them. Top them with plain old Log Cabin syrup, they don't need anything else.

I don't really like breakfast food. But I love the chocolate chip pancakes from IHOP. I could eat them everyday! At home though my dad always made pancakes with pieces of apple in them. I don't eat syrup (make flavor makes me sick) so I put butter & honey on them so they aren't so dry.

I make my pancakes with bisquick-they always come out nice and fluffy with this mix.
Then i add just about a tablespoon of Hersheys baking cocoa to it.Then just a dash or two of cinnamon and tablespoon of sugar!
Top with real butter and syrup!
I call them mocha cinnamon swirl cakes.!~
