Guacamole:
Start out with 6-8 ripe avacados (between Alligator green/brown in color)
Blend up avacado until it's a puree. Add salt (to taste) Garlic, Lime Juice (also to taste) Pepper, a dash of your favorite hot sauce (Red Devil works great) and miniscule amount of cilantro. You can also add some saffron if you have the means.
This is THE very best guacamole I've ever eaten. Sounds basic, yes. But if you do everything to taste you don't need a bunch of other BS to make up for lack of flavor.

Classic Guacamole
Cumin and other basics uncover the secret to classic guacamole.
Makes 8 servings
Ingredients:
4 avocados, seeded and peeled
2 tablespoons lemon juice
1 clove garlic, crushed
1 tomato, finely chopped
1/4 cup finely chopped onion
1/4 teaspoon ground cumin
3 drops hot pepper sauce
tortilla chips
Preparation:
Using a fork, coarsely mash avocado with lemon juice and garlic. Stir in remaining ingredients to blend.
Garnish as desired and serve with tortilla chips.

Most of the time I only use avocado, diced tomato, diced onion, and a bit of salt. You can add all sorts of things, but most of the time I'm lazy and just want a quick snack so I only use those 4 things. I also only dice up the avocado instead of mashing because it's quicker and the guacamole is chunkier. It will turn brown if you don't add lime juice, but it's not bad for you.

GUACAMOLE
Ingredients:
2 – ripe avocados, peeled and pitted
2 – tomatoes, peeled and seeded
1 - medium onion, finely chopped
2 – green chili peppers, finely chopped
1 – garlic clove, crushed
1 – tablespoon lemon juice
1/2 – teaspoon salt
1/2 - coarsely ground pepper
1/2 - cup mayonnaise or salad dressing
Directions
In a blender, add all ingredients, except mayonnaise or salad dressing.
Blend until smooth.
Then add the mayonnaise or salad dressing and mix until smooth.
Place in a container and cover.
Chill in refrigerator until ready to serve.
Serve with tortilla chips..Hope this helps..

"Guacamole" - 2 1/2 cups

Tortilla chips or potato chips
1) Cut each avocado in half; remove seed. Scoop out pulp into a bowl; with fork, mash avocado. Add remaining ingredients (except tortilla/potato chips); stir until well mixed.
2) To serve: Turn mixture into serving bowl; surround with tortilla chips for dipping. Serve immediately.

Concord Foods makes a great mix, sold in supermarkets usually hanging right above the avocados. You just mash 2 ripe avocados and add the mix--and sometimes add some extra cilantro if I have it about. I don't know if they have it where you live but if you see it, try it, it's delicious.

I make it with fresh diced avocado's, chopped tomatoes, small chunks of cheese (your favorite....I use Monterrey Jack or Colby, and Cheddar....), cottage cheese, cilantro, and diced onion, oh and a squirt of fresh lemon juice to keep it all from going brown :)
