This is an aweomse question because I always wondered myself when I drank Henessy. VSOP (Very Superior Old Pale), Réserve, where the youngest brandy is stored at least four years in cask. I think that the Pale refers to the color of the cognac. From reading the link below, it came across that they mostly used light colored grapes as well. They named a lot of blancs, and I think that could be the reason.
