Spicy Peanut Sauce
Ingredients:
2 tablespoons fresh cilantro, chopped
3 tablespoons warm water
3 tablespoons chunky peanut butter, room temperature
1 teaspoon brown sugar
1 good pinch of red pepper flakes, crushed between your fingers
1/2 teaspoon soy sauce
Preparation:
Combine all ingredients in a bowl and whisk briskly.

Peanut sauce is pretty easy to make. Im guessing on all the amounts, I dont measure when I cook.
For 2 cups sauce:
2tsp Minced Ginger
3 cloves Minced Garlic
1c Water
1c Peanut Butter
3tb Soy Sauce
3 tb Coconut Milk
2tsp Sambol (garlic chili sauce)
2 tsp Lemon Juice.
Heat pan with ginger and garlic, dry fry them, add water, bring to a simmer, add the peanut butter, add the coconut milk and soy sauce, add the sambol, then add the lemon juice to lighten the flavor. Make sure you have balance in the flavor. It shouldnt taste like you are eating peanut butter, it should have a little salty flavor and a little heat to it, but be creamy and light tasting not heavy like peanut butter.

Here's a quick recipe for a super easy peanut sauce. Simply mix a cup of peanut butter with a half a cup of soy sauce. Zap it in the microwave for a minute to help mix it up. Feel free to add things like cilantro, hot pepper flakes or curry to your liking.

RECIPE 1:
1/3 cup peanut butter, crunchy or smooth
1/2 cup water
2 tablespoons soy sauce
1 tablespoons lime juice
1 clove garlic, minced
2 teaspoons grated ginger
1/4 teaspoon red pepper flakes (or to taste)
Mix all the ingredients well.this make approx. 1 cup.
(this is a rather fatfree recipe..trust me)
RECIPE 2:
{more chinese n less thai..its really yummy...}
INGREDIENTS:
1/4 cup low sodium chicken broth
1/2 cup peanut butter
3 garlic cloves, minced
2 tablespoons cilantro leaves, chopped
2 mint leaves, chopped
1 tablespoon plus 2 teaspoons sugar
2 tablespoons soy sauce
3/4 teaspoon chili powder, or to taste
PREPARATION:
Warm the chicken broth in a small saucepan and keep warm on low heat.
Process the peanut butter, garlic cloves, cilantro and mint leaves and sugar in a blender or food processor. Slowly add the warmed chicken broth and process again.
Remove from the blender and stir in the soy sauce, and the chili powder to taste.
Serve peanut sauce with satay and salads, or as an appetizer dip.

1/3 cup hot water
2/3 cup peanut butter
1/3 cup soy sauce
2 tablespoons lemon juice
1 teaspoon cayenne pepper
1/4 cup light corn syrup
1/4 cup dry sherry
Combine all ingredients in a large bowl and stir well (stir in the sherry last, gradually. Taste for sweetness).

You may also want to add a little bit of oil to the peanut sauce --it smoothes out much better. I also add fresh basil to mine alongside the cilantro..yum! you can really be creative with the sauce, adding fresh or ground ginger, lemongrass, or whatever!
