A friends husband had them and loves them but doesn't remember what's in the batter.

Here are a couple of the recipes that I have used:

SWEET POTATO FRITTERS

1 lb. sweet potatoes or yams
1 egg
2 tbsp. flour
Plus flour for coating
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
Oil for frying

Quarter sweet potatoes. Put in a large of water. Bring to a boil and cook for about 15 minutes. Cool and peel. Put in a food processor with egg, 2 tablespoons flour and 1/2 teaspoon salt. Puree until smooth. Stir in cinnamon and nutmeg.
Heat 1/2 inch of oil in a large frying pan. Flour your hands and shape potato mixture into patties. Coat patties with flour and fry until brown, about 3-5 minutes. Drain on paper towels.

Sweet Potato Croquettes

INGREDIENTS:

6 small sweet potatoes, peeled cooked until tender, mashed
2 tablespoons butter
1/3 cup sugar
1/2 teaspoon cinnamon
1 teaspoon salt
marshmallows, regular size
cornflake crumbs
oil for deep frying

PREPARATION:
Season the mashed sweet potatoes with the butter, sugar, cinnamon and salt. Shape into balls around each marshmallow, making sure marshmallow is completely covered. Chill for 3 to 4 hours. Roll croquettes in cornflake crumbs and fry in hot oil, approximately 370°.
Drain on paper towels and serve immediately.
Serves 4.

A simple Tempura batter will work.

1 egg
1 cup ice water
1 cup all purpose flour
PREPARATION:

Add iced water gradually, stirring and blending well.
Add flour all at once, stir BRIEFLY; that is well enough to coat but leave the lumps and bumps!
To fry vegetables heat a large frying pan with a half-inch oil (or more if necessary) and heat on high.
Coat selected large vegetables in batter and fry for a minute or two on each side.

1 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 egg, lightly beaten
1 c. milk
2 tbsp. oil
1 lb. sweet potatoes, cut into sticks
Additional flour (optional)
Oil for deep frying


Sift flour with baking powder and 1/2 teaspoon salt. Combine egg, milk, and 2 tablespoons oil. Slowly add to dry ingredients, beating until smooth. Pat sweet potato sticks very dry and if desired dredge lightly in flour. Dip pieces, one at a time, in batter. Fry in deep oil heated to 375 degree until golden brown, 1-2 minutes. Drain on paper towels. Sprinkle with more salt, if desired.

Home Fried Yams:

50 min 30 min prep
4 servings

4 medium yams, peeled
1 quart water
1/2 teaspoon salt
4 tablespoons butter
2 tablespoons sugar

1. Cut yams into 1" thick slices.
2. Combine water and salt,soak yam slices for 30 minutes.
3. Remove from water and drain and pat dry.
4. Melt butter in large skillet,add yams,brown quickly on both sides.
5. Sprinkle with sugar,stir gently to coat both sides.
6. Cover,reduce heat to low,simmer 15-20 minutes or until fork tender.

slice then batter them in tampura batter and fry them in vegtible oil .
