my wife has mixed up a whole batch of hog gizzards, chitlings and possum for this thursday night and i've been told this is best served with either pickled paw paws or pickled crawdats but we have no recipe for either of them............ any help out there??

paw paw are fruit also know as Papaya!

make sure they are boiled till completly done,, Then pickle them like you would eggs vinigar bacon and bacon fat and other seasoning to your taste
