Bangers (English Sausage Making)


British Sausages, Pork

BANGER SEASONING
5 ts Ground white pepper
2 1/2 ts Mace
2 1/4 ts Salt
2 ts Ground ginger
2 ts Rubbed sage
1/2 ts Nutmeg

SAUSAGE
2 1/2 lb Boneless lean pork shoulder
-or loin cut in cubes
1 lb Fresh pork fat in cubes
1 1/2 c Dry bread crumbs
1 1/4 c Chicken broth
3 1/2 ts Banger seasoning

Grind pork and fat together using fine hole disc of
meat grinder. Add Banger
Seasoning. Mix well. Grind again. Force mixture into
casings and tie in 4-5 inch lengths.

This mixture will be too fine to form into patties.
Bake or saute.

Stick to the traditional ones but make them with really good ingredients. Some of the ones available today are far too fancy for their own good. A local one to me is pork,stilton, and bramley apple. I saw them in a posh butchers and thought I would try them. The nearest I can describe them is vomit sausages. Vile, even the dog wouldn't eat them.

Mix sausagemeat with chopped leek-chopped onion --thyme -sage and white pepper--- yummy good luck.

90% pork and beef mince sage leaves chopped onion and a diced clove of garlic mince it all together then make your bangers mate, well nice!!!!

when you have your potatoes mashed add beaten egg to mash and believe me it leaves the mash really fluffy add a little ground pepper try it and you will never eat mash any other way enjoy
