Hi! I LOVE my slow cooker...I hope you find it helpful and convenient for lazy days...or super busy days!! Here are some really good recipes I have used...I hope you enjoy them!! Good luck and have fun trying new dishes.
Honey Dijon Chicken
8 (4 oz.) boneless, skinless chicken breasts
2 cups fat-free honey-dijon salad dressing
Spray slow cooker with cooking spray
Put chicken in slow cooker and cover with dressing
Cover and cook on high 3-4 hours or on low 6-8 hours
---
Favorite Barbecue Chicken
4 to 6 boneless, skinless chicken breasts
1 bottle (16 oz.) barbecue sauce
Put chicken into greased slow cooker. Pour bbq sauce over chicken. Cover and cook on high heat 4-6 hours or on low 8-10 hours. I shred mine 1 hour before serving and have shredded chicken sandwiches. To shred it you use 2 forks and pull the chicken apart...it's really tender and it practically falls apart for you.

2 (10 oz.) cans chicken breast, NOT drained
1/2 cup frozen chopped onion (or raw diced)
1 1/2 tsp. chili powder
1 cup chicken broth
Sour cream
Spray slow cooker with cooking spray
In the cooker add beans, chilies, chicken, onion, chili powder, and broth. Mix well.
Cover and cook on high 3-4 hours -OR- low for 6-9 hours
Stir 1 Tbsp. sour cream into each 1 cup serving
Yield : 9 Servings 1 cup each
---
Mild Chili-Cheese Dip
2 cans (15 oz. each) chili, with or without beans
1 pound mild Velveeta cheese, cubed
Combine all ingredients in greased slow cooker and cover. Cook on low 1 ½ - 3 hours, stirring every 30 minutes, until cheese is melted.
Serve with tortilla chips, veggies, or as a topper for fries or hot dogs.
---
Broccoli-Cheese Soup
2 packages (16 oz. each) frozen chopped broccoli
2 cans (10 ¾ oz. each) cheddar cheese soup, condensed
2 cans (12 oz. each) evaporated milk
¼ cup dried minced onion
½ teaspoon salt
¼ teaspoon pepper
Combine all ingredients in greased slow cooker. Cover and cook on high heat 2-3 hours or on low heat 4-5 hours.
Spoon over baked potato or simply serve and eat.
---
Cola Roast
3 pound beef roast
1 envelope dry onion soup mix
2 cans (12 oz. each) cola*
Place roast in greased slow cooker. Sprinkle with soup mix. Pour soda all over. Cover and cook on low heat 7-8 hours.
*Diet soda CANNOT be substituted
---
Mama’s Italian Chicken
4 frozen chicken breast halves
1 envelope Italian salad dressing mix
1 can (14 oz.) chicken broth
Place chicken in greased slow cooker. Sprinkle with dressing mix. Pour broth on top. Cover and cook on high heat 4-5 hours or on low heat 8-10 hours.
---
Creamy Chicken Soft Tacos
4 frozen boneless, skinless chicken breasts
1 jar (16 oz.) salsa
1 cup sour cream
6-8 flour tortillas
Place chicken in greased slow cooker. Pour salsa on top. Cover and cook on high heat 6-8 hours or on low 10-12 hours. Shred chicken by pulling apart with 2 forks. During last hour of cooking stir in sour cream.
Put chicken in tortillas with your favorite taco/burrito toppings.
(My husband and I LOVE this recipe…we have found that we needed more like 10 tortilla shells as this made A LOT of chicken…we used black beans, extra sour cream, lettuce and shredded cheese as our toppings…we made burritos instead of tacos…this is SUPER easy to make and it tastes SO good!!)
---
Sweet and Sour Pork
1 pound pork tenderloin, cut into 1-inch pieces
1 can (20 oz.) pineapple chunks, drained
1 cup sweet and sour sauce
¼ teaspoon ground ginger
Place all ingredients in the order listed above in greased slow cooker. Cover and cook on low heat 4-6 hours.
Serve over hot cooked rice.

Crock pot roast is awesome! And yes, you'll need some liquid - about 12 ounces for a 2 or 2.5 pound roast. Beer is best, though beef broth would also be good, and I've even used Dr Pepper successfully in the past. Definitely put the carrots and onions at the bottom of the pot, then the liquid, then the meat. If you add potatoes, put them in last - if you put them on the bottom, they'll absorb too much liquid and turn to mush. Carrots are tougher; they can take it. And season the meat before it goes in the pot. Even a packet of onion soup mix is good for that.

Go to allrecipes.com They have a whole section for slow cookers/crock pots. They have lots of user ratings for most recipes, too, so you'll know if it's worth trying before you actually make it.
I actually got a crock pot for Christmas, too. They even sell a recipe book for just crock pot recipes at Target.

I have a recipe book just for slow cookers or crock pots. Here is a good recipe for Vegetable Soup.
1 lb. boneless round steak, cut into cubes
1 can diced tomatoes, undrained
3 cups water
2 potatoes, peeled and cubed
2 onion, diced
1 cup celery, chopped
2 carrots, sliced
3 beef bouillon cubes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups mixed vegetables, fresh or frozen
Combine the first 12 ingredients in your cooker. Cover and cook on high for 6 hours. Add vegetables; cover and cook on high for 2 hours longer or until the meat and vegetables are tender.
8-10 servings.

I have an AWESOME crock pot recipe book. It is called
"Fix it and Forget it". I love it and use it all the time. I have not had one bad meal out of it.
For thanksgiving this year I made applesauce in my crock, yummy.
Here are a few super easy favorites of our family:
pulled pork sandwiches: Big pork roast, no bone
put it in the crock and pour 2 bottles of BBQ sauce over it ( we like Sweet baby Ray's honey) add just a bit of water. Cook on high for one -2 hours and then on low for 4-6 more. When you are ready to eat, just "pull" the meat apart with a few forks, serve on buns. YUMMO!
We also like to put sliced carrots, potatoes and onions in the bottom, then a boneless beef roast on top of that. Sprinkle with a package of dried onion soup, add a can of mushroom soup and a bit of water. Cook on high for 1 hour or 2 (depending on size of roast) and then on low for 3- 4. This makes a great pot roast.
The cookbook I mentioned also gives cooking times compared to your regular stove and how to figure it out. Seriously, this cookbook has helped me use my crock pot so much more.
You can see it here: http://www.amazon.com/Fix-Forget-Cookbook-Feasting-Cooker/dp/1561483397
Hope that helps. Enjoy your crockpot - I do :-)

We use ours almost weekly. Split pea and ham soup, and 15 bean soup is easy and great for a weekend meal. For a little indulgence we throw a corned beef brisket in there. It's just the brisket, the seasoning packet, a beer, 6-7 cups of water, baby carrots, quartered potatoes, quartered onions, and some celery and a couple bay leaves. It's so tender after 6-8 hours.

I love my crock pot. I am always doing something so it is really easy. I have several:
Chicken a' la Crock Pot:
Put chicken breasts, cream of chicken soup, carrots, and chopped potatoes, salt and pepper in and voila' . Put on medium heat all day. If your soup is condensed, add as much water as it tells you.
Pot Roast
Chopped potatoes, carrots, onions, 4 cans cambell's beefy mushroom soup, and a roast (thawed)
Put in and turn on medium heat all day. Yum!

The best and easiest thing I make in my crockpot, is a roast. You buy a boneless round roast and chop up carrots and potatos and put them all in the pot. Then add a package of dried onion soup mix and 2-3 cups of water....it is very good.....
