Minted potatoes are nice, add chopped fresh mint to them just afer cooking and toss them about before serving. Mashed potatoes made with low fat yoghurt with crushed garlic, instead of butter.

Why not make yourself a potato-salad. I peel potatoes, cut them into squares, stick into a bowl cover it and microwave till just soft. Pour off water. Boil two eggs and grate them and add to potatoes, chop a onion very fine , small onion , add to potato's, chop loads of parsley add to potato's , some black pepper and salt if needed. Use a low-fat salad-dressing and mix in the potato mixture. Yummyyyyyy.

Plain boiled potato's some butter and parsley. Also tasty.

Enjoy :)))

There are heaps of fresh and dried herbs available- experiment and find what you like best- I like mint or basil or rosemary the most. As for salads you can buy low fat/ cal dressings ready made, but I prefer to use balsamic vinegar as it's less artificial

I love garlic with vegetables and potatoes. Added bonus garlic is so good for you. I am pretty sure vinaigrette is low in calories. You could put that on your salad.

for boiled potatoes try olive oil, Rosemary and lemon..
also to put on salad I always use the same as it is healthy and contain the good fat - olive oil, lemon and sunflower seeds or slightly roasted pine nuts - my favourite..very good for any type of salad.
