When I was young my mum would make this wonderful potato dish, it was thinly sliced potatoes, Im not sure if the potatoes were cooked first or what was added with them but the end result was a crispy brown top with lovely tasting potatoes and it was served with a casserole and crusty bread, does anyone any idea on the recipe and how this potato dish was cooked

1 kg/2lb 4oz baking potatoes, peeled and placed in a bowl of cold water to prevent them from browning (use floury potatoes such as Russet, King Edward, Maris Piper or Desiree)
3-4 cloves garlic
500ml/17½fl oz double cream (you may need a bit extra)
salt and freshly ground black pepper




You will need a large gratin dish


Method
1. Preheat the oven to 160C/320F/Gas 2.

2. Slice the potatoes into thin slices, about 2mm-3mm/0.13in thick. Place the slices into a bowl as you cut them.

3. Trim the ends off the garlic cloves but don't peel. Grate the cloves on a grater. The flesh will go through the fine holes and the skins will be left behind. Scrape the grated garlic flesh into the bowl with the potatoes.

4. Season the potatoes, to taste, with salt and freshly ground black pepper and mix well.

5. Pour the cream over the potatoes and mix well again.

6. Place the potato slices into the gratin dish. They should come to just below the top of the dish. Press the potato down with the back of a spoon or your hands so it forms a solid layer. The cream should come to just below the top layer of potato (top up with more double cream if necessary).

7. Place the potatoes in the oven and bake for 45-60 minutes, then check it. If the cream looks like it's splitting, your oven is too hot, so turn it down a bit. When cooked, the gratin should be golden on top and the potatoes tender. If necessary, give it another 15-20 minutes.

8. Serve the dauphinoise as a side dish to roasted meat or poultry.

sounds like gratin dauphinois, try this recipe


Prep time 45 min
Cooking time 1 hour
Serves six

Ingredients

2lb (1kg) potatoes (waxy potatoes such as pink fir apple, russet)
1 or 2 cloves garlic, mashed
2 oz butter
2 cups (50cl) whole milk
5 oz (160g) French or Swiss Gruyère cheese
1 pint double cream
Salt and pepper


method
Step 1: Preheat oven to 360ºF (180 ºC). Slice the potatoes into thin slices (1/8 inch thick). Rinse in cold water. Drain and dry in a towel
Step 2: Put the potatoes in a pan and cover with milk. Add salt
Step 3: Bring to the boil starting at moderate heat for 5 minutes then low heat for 10 minutes. Stir from time to time.
Step 4: Rub a fireproof dish with garlic and grease it well with butter. Transfer half of the potatoes in the gratin dish. Add half the cheese, double cream and pepper to the layer. Put the second half of the potatoes and cover with the cheese and double cream left.
Step 5: Put the dish in the oven and cook for 1 hour at 360ºF (180 ºC). Gratin Dauphinois is ready when the top is gold and brown.

I make this sort of thing sometimes. Slice pots thinly and par-boil (that means just bring up to the boil, then take off and drain). Layer in a greased oven proof dish like this. Layer of pots, then pour over a little milk and some grated cheese (grated onion too if you like), then another layer of pots, more milk more cheese etc. right to the top. Slow cook in low to medium over. Cover but uncover for last half hour or so to brown pots. You will be able to tell if cooked from the look and if you stick a knife in and pots are soft. You can experiment with this one. By the way, if mum alive ask her for HER recipe. If not, maybe its written down somewhere or auntie or someone knows it.

it is called pomme dauphois and is really easy

thinly slice the potatoes and place in a casserole dish. Pour over the milk or to make it a bit more special use single cream

plenty of salt and pepper and bake in a medium oven about gas 6 sorry dont know equivelents for 20 to 25 minutes.

you can if you like finish it off by grating cheese on the top and popping it under a hot grill until the cheese melts

my boyfriend makes this dish and adds bacon and cheese on top! thinly slice potatoes, chuck em in a dish, add milk and whatever else u fancy then chuck in oven till crispy!
