Picante Chicken Chili
Ingredients:
1 medium onion, chopped
3 cloves garlic, minced
1 tablespoon vegetable oil
1/2 pound chicken breast, skinless, boneless, cut into 1-inch pieces
2 teaspoons sage
1 teaspoon cumin
1/4 teaspoon salt
3/4 cup picante sauce
16-ounce can kidney or pinto beans, undrained
1/4 cup dry vermouth
1 bay leaf
1 green or red bell pepper, cut into 1/2-inch pieces
1 large tomato, seeded, coarsely chopped
Optional Toppings:
chopped cilantro
sour cream
shredded cheddar cheese
Preparation:
Cook onion and garlic in oil in large saucepan or Dutch oven until tender, about 4 minutes. Stir in chicken, cook until chicken is no longer pink, stirring constantly.
Sprinkle sage, cumin and salt over chicken; cook and stir 1 minute. Stir in picante sauce, beans, vermouth and bay leaf. Bring to a boil, reduce heat. Cover and simmer for 10 minutes.
Stir in green pepper and tomato, continue to simmer uncovered for 10 minutes. Discard bay leaf. Ladle into bowls, top as desired and serve with additional picante sauce.
Chicken Tortilla Soup
Ingredients:
Chicken:
One 3-pounds chicken, cut up
8 cups water
3 tablespoons chicken base
1 stalk celery
1 white onion, chopped
2 bay leaves
1/2 teaspoon thyme
1/4 teaspoon oregano
6 sprigs parsley
1/4 teaspoon ground black pepper
Soup:
2 tablespoons olive oil
1 green bell pepper, sliced
1 red bell pepper, sliced
2 white onions, sliced
8 cloves garlic, minced
4 tablespoons chili powder
1 1/2 tablespoons ground cumin
4 cups chopped, roasted tomatoes, peeled and seeded
1/2 cup firmly packed chopped cilantro
Salt and pepper, to taste
Fried corn tortilla strips
1 1/2 cups shredded monterey jack cheese
1/2 cup chopped green onions with tops
Preparation:
Place chicken in a Dutch oven and add remaining ingredients in first list. Bring to a boil. Reduce heat, cover and simmer for 45-50 minutes.
Allow chicken to cool in stock. Strain off stock and save for soup.
Remove all skin and bones from chicken and shred the meat. Set aside. Sauté peppers and onions in oil for 5-7 minutes.
Add garlic, chili powder and cumin. Cook 3 minutes.
Add chopped tomatoes and cook 10 minutes to reduce liquid. Add chicken stock, shredded chicken and cilantro. Season to taste.
Bring to a boil, reduce heat and simmer 3 minutes. Skim to remove fat. To serve, place tortilla strips in soup bowls, ladle in soup and top with Jack cheese and green onions.

Here's a crock pot recipe. I would think whether you cook it on the stove or crock pot you would always want to add the cheese to garnish - not to cook.
White Chicken Chili Recipe
Put in crock pot. Cook on high 6 – 8 hours
7 cups chicken broth
2 teaspoon lemon pepper seasoning
4 teaspoon ground cumin
2 tablespoon olive oil
2 - 4 boneless skinless chicken breast halves, cut in small pieces (depending on how much chicken you like!)
1 tsp. garlic
1 large onion, chopped fine
½ bag frozen corn
4 (4 ounce) cans chopped green chilies, undrained
4 (14 ounce) cans great northern beans, undrained
cheese, to garnish

I have a great recipe for, what I call, enchilada casserole. You need:
4 boiled Chicken Breast
Corn tortillas (only half a bag)
can of chili
can of cream of mushroom soup
salsa (hot as you want it)
Lipton Spanish rice-cooked according to the directions
Monteray Jack cheese
crushed red peppers
jalapenos and black olives, for garnishing
Line a casserole dish with the pulled apart chicken breast.
Shred half of the corn tortillas and cover the chicken breast and set to the side.
In a bowl, mix together the chili, cream of mushroom soup, rice, salsa and season with crushed red peppers, and jalapenos to your like. Taste the mixture to make sure you have enough of each ingredient.
Pour the mixture over the chicken and tortillas. Add another layer of shredded tortillas and cover the dish in cheese. For added color and flavor, add the olives and jalapenos to the top. Bake in the over at 350 degrees for about 30 minutes, or until the cheese melts.
I have not met one person who does not love this recipe. It was given to me, and I added the rice and jalapenos for my own flavor, so have fun with it!! It was a HIT at pot lucks and Christmas parties this year.

Chicken & Chili
1 fryer, cooked, deboned & cut into pieces (save 3/4 cup broth)
1 pkg taco shells(12) or corn tortillas (12)
1 (4oz) can green chili
1 sm can mushrooms, drained
1 can cream of mushroom soup
1 can cream of chicken soup
Grated Cheddar cheese for top
Layer torn up tortillas or broken taco shells, then chicken, green chili, then mushrooms
in 9x13 inch cake pan. Mix soups with broth and pour over layers. Top with grated cheese.
Bake at 350* about 1-1 1/2 hours (covered part of the time).

Made ground beef version, added zucchini as well. Needed lots of salt & pepper to keep it from being too bland. Will make this again.

Yummy! With trying to eat healthy. I used ground chicken, red onions, zuccunni, mushrooms, red and green peppers, both black and kidney beans. The beans were canned in jalopeno sauce, which really adds some flavor if you like your chili spicy. Salsa is someting I never thought about using in chilli, and is was great! What I great way to get your protein and veggies!

The cheese and bitter cream may be tasty, yet undesirable. ldl cholesterol counts are extreme in cheese and dairy products. in case you locate this recipe attempt to cut back the cheese once you practice it.
