its my 2nd wedding anniversery in a months time but want to plan ahead for the perfect day. Because its on a monday ive planned to go away to a leisure countryside hotel from fri to mon for a good weekend from the kids and on the monday go out for a special day. Then i want to go home and prepare a special dinner for our anniversery- 3 course meal. We dont eat fish or lamb, any suggestions for a 3 course meal?

Potato-cheese soup
Easy to prep....(Serve 4)
In saucepan, combine 2 cups chicken broth, 2 cups water, 3 cloves garlic, and 4 sliced scallions. Bring to boil, add 11/2 lb. peeled and sliced all-purpose potatoes, and cook until tender. Partially mash with potato masher. Stir in 1 cup shredded white cheddar until melted. garnished with minced scallion.

Main course

Chicken in Mustard Sauce with Leeks
Prep 15 min / Cook 30 min (serve 4)
This delicious and filling dish uses the most basic of british foods, and takes very little time to make. The leeks, which are the sweetest of the onion family, offer a tasty contrast to the flavours of the bacon and mustard sauce. Look for fresh, young leeks which are mainly white, not green.

4 boneless and skinless chicken breasts
8oz (225g) leeks
Pepper
8 rashers streaky bacon
1 tbsp olive oil
1 tbsp mustard powder
1 tbsp plain flour
3/4 pint (450ml) chicken stock
Freshly chopped parsley to garnish

Wash and cut the leeks into rings and reserve. Cut the pieces of chicken in half crossways and season with pepper. Then remove the rind from the bacon and lightly cook the rashers in the oil in a large nonstick frying pan over a low heat.
Stretch out each rasher of bacon, using the back of a knift, and then wrap one aroung each piece of chicken. Secure each rasher with a cocktail stick.
Place the chicken in the frying pan and stir in the mustard powder and the plain flour. Cook for 1-2 minutes, then stir in stock and bring to the boil. Reduce the heat and add the leeks. Cover and simmer for about 15 minutes until the leeks are tender. Garish with parsley and serve.

Desserts
Fresh Oranges with Caramel
Prep 20 min / Cook 5 min (Serves 4)

If you need a light dessert after a filling meal, try serving this colourful dish in which the freshness of the oranges complements the sweetness of the caramel perfectly.

8 large oranges
3oz (75g) granulated sugar
4 small sprigs fresh mint for garnish

Cut away the rind, pith and skin from the oranges. Holding each peeled orange over a bowl to catch any juice, divide into segments by sliding a knife down one side of the segment and cutting it from the skin, then cutting down the other side and pulling out the section. Repeat with the remaining segments and then divide the segments and juice into individual serving bowls.
Put the sugar in a heavy-based pan with 2fl oz(50ml) of cold water and bring to boil over a medium-high heat, stirring occasionally. Boil the syrup for a few minutes, watching very closely to prevent it from burning. Cook until it turns a rich golden-brown, then remove the pan from the heat immediately and trickly over the bowls of orange. Garnish with mint and serve quickly, before the caramel starts to dissolve.

Start with bruschetta. This can be both your salad and bread. A simple recipe is slice baguettes and toast. After toasting take whole garlic and scrape along toasted bread. Take roma tomatos and slice thin, place one basil leaf (two if they are small) on the bread, then tomato slices then top with a good italian cheese. Place back in oven to just melt cheese.

Main dish preheat oven to about 350
brown boneless skinless chicken breasts then place in large baking dish. Saute onions and garlic, then add zest from one lemon. pour two jars alfredo sauce and some lemon juice to the pot and some white wine. Let this cook for about 1-2 minutes. Pour over chicken. Slice a lemon really thin and top each piece of chicken with lemon slices for garnish and bake just long enough to finish cooking the chicken. You can also top with tomatoe slices or basil leaves. Cook pasta according to directions. When pasta is done, do not drain but instead grab pasta with tongs and swirl onto dish, then top with chicken breast and some sauce.

For dessert try creme brulee or if you need something easier, try chocolate covered strawberries, or cheesecake. Place fresh berries on cheesecake and swirl with chocolate sauce. I have found that having anything sweet after garlic gets rids of garlic breath. Serve dinner with white wine and champagne with dessert. God luck and congrats.

Not sure about 3 course- but how about somthing italian? They do say thats the food of love.
Chicken Carbonara is very nice.
Its basically fresh pasta in a creamy white sauce with chicken strips stirred in. Great for people that are overpowered by powerful cheesey sauces. Its very easy and quick to cook (fresh pasta takes just 6 mins. You could accompany it with garlic bread, etc.

Italian Ice cream for dessert mmmmm!!

I would steer clear of pizza though lol

Balsamic Chicken & Veggies
Serves 4

1 cup diced onions
1 cup baby carrots halved lengthwise
4 oz sliced baby portabella mushrooms
1 lb boneless skinless chicken breasts
Cooking spray
1 tsp “any dry rub/seasoning you choose”(as long as it’s from my “Rubs” Page) See Them Here
1 & 1/2 Tbsp balsamic vinegar

Place onions, carrots, and mushrooms in microwave-safe bowl. Cover and microwave on high 5 minutes.

Preheat large sauté pan on medium-high 2–3 minutes.

Cut chicken into 1 1/2-inch-wide strips, washing your hands after, of course.

Spray pan with non-stick stuff & add chicken, using tongs so you don’t have to wash your hands again. Sprinkle with the dry rub, cover and cook 2 or 3 minutes, turning once.

Drain vegetables and stir into chicken. Cover and cook 5 minutes, stirring once, or until vegetables begin to brown.

Remove lid and cook 3 more minutes, stirring once. Stir in balsamic vinegar and serve it up – yum, yum.

Tomato & Cucumber Salad
Serves 4

Not a very catchy title but those are the main ingredients so why not? But when you add the rest it’s really special. (how about Mato & Cuke Special? N-a-a-a.)


1 cucumber, halved, seeded, and cut into 1-inch pieces
3 cups Italian plum tomatoes, quartered
1/4 cup chopped red onion
3 Tbsp chopped fresh Italian parsley
1 Tbsp finely chopped green pepper
1/4 cup fresh lemon juice
3 Tbsp olive oil

Mix the cucumber, tomatoes, onion, parsley, and pepper together . Toss with the lemon juice and olive oil. Let sit for 15 minutes before serving so the flavors can blend a bit. Add salt to taste, if you must.


Zucchini Couscous
Serves 2

Couscous is the separated grain of the wheat plant and makes a terrific rice substitute that has the advantage of being more flavorful as well as way quicker to make than rice. This recipe helps toward both your daily vegetable and grain requirements.


1/4 lb zucchini
1/2 Tbsp olive oil
1/4 tsp ground cumin
1/2 cup boiling water
1/3 cup couscous


Cut zucchini into 1/4-inch dice.

In a non-stick skillet cook zucchini in oil with cumin and salt and pepper to taste over moderate heat, stirring, until just tender, about 5 minutes. Add water and bring to a boil. Stir in couscous and remove skillet from heat.

Leave it covered for 5 minutes then fluff couscous with a fork. Very quick & very tasty.


Peaches with Raspberry Yogurt Sauce
Serves 4.

If fresh peaches are unavailable or grossly expensive cheat and use canned sliced peaches without the juice.

1 cup frozen unsweetened raspberries
1 Tbsp honey
1/2 cup low fat yogurt
4 fresh peaches


Create the sauce by combining raspberries, yogurt and honey in a blender.

Peel peaches, slice and spoon into individual dishes spooning sauce over them. Garnish with fresh raspberries or mint.

to start pineapple chunks rolled in ham
main coarse chicken breasts stuffed with bacon mushrooms and onions, fried in garlic butter served on a bed of pasta with special mixed veg mixed into it and all of this with some cheese sauce on top.
pud summer fruits broule amaretti biscuits crushed with some Brandy on them then a layer of white grapes and strawberries do about two layers of this then mix some cream and creme fresh and cover the layers with this and then place in the fridge to chill just before serving sprinkle brown sugar on top and then place under grill till sugar has melted then serve
