IRISH WHISKEY CAKE
1 (18 1/2 oz.) pkg. yellow cake mix
Lg. size vanilla pudding mix
1/2 c. milk
1/2 c. oil
1 c. whiskey
4 lg. eggs
1 c. chopped walnuts
Glaze, recipe follows
Blend cake mix and pudding mix. In a separate bowl, blend milk, oil and whiskey. Add to dry ingredients and mix. Beat in eggs one at a time. Scrape sides of bowl. Mix 2 minutes on moderate speed until smooth. Stir in walnuts. Pour into lightly greased tube pan. Bake in a preheated 325 degree oven for 1 1/2 hours until the cake is lightly browned and tests done.
When cake is done, remove from oven and pour glaze over cake in pan. Let cool on rack 1 hour. Remove from pan upright onto plate. Cake is best when left to mellow overnight before cutting.
GLAZE:
1 stick butter
1 c. sugar
1 tbsp. water
1 c. whiskey, divided
To make glaze, melt butter in a saucepan. Add sugar, water and 1 tablespoon whiskey. Bring to a light boil and simmer 10 minutes. Remove from heat and cool 3 minutes. Stir in remainder of whiskey.

4 cups all-purpose flour (sift before measuring)
1 tablespoon cinnamon
1 tablespoon cloves
1 tablespoon allspice
1 tablespoon nutmeg
1/2 tablespoon mace
1-1/2 teaspoon salt
7 pounds dried fruit
1 pound brown sugar
1 pound butter (plus 1/2 stick)
15 eggs
1/2 cup red wine
1 bottle of whiskey
The dried fruit can be whatever you like. I tend to use dates, raisins, currants and cherries.
If you put in a lot of tart fruits, you might want to increase the brown sugar a little to compensate.
The red wine can be anything you have or port, sherry, or just fruit juice.
This recipe makes about 12 pounds of cake.
Tools you may need:
Scissors (for cutting up fruit; you can use a knife, but it takes longer)
Pastry brush (for buttering pans; you can use a paper towel)
Electric mixer (essential!)

PROCEDURE:
Preheat the oven to 300°.
Cut up the fruit (remove pits if necessary);
Put the fruit and 1 cup of flour into a big paper bag and mix it (this is to keep the fruit from sticking to itself, and allows the batter to coat it better).
Put 1 pound of butter in a pan over a low flame to melt (save the 1/2 stick for later).
Mix 3 remaining cups of flour and the spices (but not the brown sugar); a sifter works well for this.
Once the butter is melted, mix in the brown sugar.
Put butter/sugar, flour/spices, eggs, and wine into a big bowl and mix with the electric mixer until completely smooth.
Mix in the dried fruit.
Melt the 1/2 stick of butter and brush it on the loaf pans.
Fill the loaf pans with the batter, it will be stiff, so push it down.
BAKING TIME:
2 hours.
Keep an eye on your cakes; when the tops look firm, pour some whisky over them; repeat this every 15 minutes until the edges start looking a little crisp, then take them out. Pour some whiskey on them as soon as they come out of the oven, and at least once more later (once they don't look moist anymore).
Because of all the whiskey, they tend to be moist, so wrap them in plastic, then aluminum foil.

Kahlua-Vodka Cake recipe
1 (18- to 22-ounce) box yellow cake mix
(with pudding in mix)
1 small box instant chocolate pudding mix
4 eggs
1 cup vegetable oil
3/4 cup water
1/4 cup vodka
1/4 cup Kahlua or other coffee-flavored liqueur
Preheat oven to 350 degrees F. Grease and flour a 12-cup Bundt pan.
In a mixing bowl, combine cake mix, pudding mix, eggs, oil, water, vodka and Kahlua; beat for 10 minutes by hand or 5 minutes with electric mixer. Bake in prepared pan 55 to 60 minutes, or until cake tests done.
Cool in pan for 5 minutes, then invert on wire rack to cool.
Once cake is cooled, poke holes in cake with a chopstick and slowly pour icing over cake.
Icing
1 cup granulated sugar
1/2 cup butter
1/4 cup water
2 tablespoons vodka
2 tablespoons Kahlua or other coffee-flavored liqueur
In saucepan, combine sugar, butter and water; bring to a boil, stirring until sugar is dissolved. Remove from heat.
Just before pouring over the cake, stir in vodka and Kahlua.
