We have cubed cheese leftover from a party (cheddar and monterey jack); can I freeze it, or should I just throw it away?

Yes, you can freeze it. My experience is it is fine melted in soup or casserole, but won't be so good to eat plain. Source says: after freezing, cheese may become crumbly and mealy, but, it will retain its flavor. It works best for cooking.

yes, put the cubes in a ziplock bag & freeze,i do it often,the cubes are handy to use when you need to.

wrap it in foil or cling film and keep it in a fridge, it will keep for a good month,do not freeze
