For some reason, the (parking )BRAKE light always illuminated on the display. If i brake at a certain level, it goes off, and when i accelerate again, it comes back on. Why is it doing this?! and yes, the parking break is down/off.

Also just the other day, the lights on the gear shifter went out.

Any help appreciated. Thanks.

Its not a park brake light, its a brake warning indicator light. Its telling you there is a problem with the brake system, most likely low brake pads, low brake shoes, or a leak in the system causing the fluid level to drop. I'm suggesting take it to a brake shop and have a brake inspection done. And you will have to go from there. I work in a brake shop and i see this all the time, even if the brakes arn't making noise and there is no pulsation. just do not top off your brake fluid up until you have a professional Technician take a look at them.

The brake light is sometimes used as an indication of a battery charging problem involving your alternator. But in your case, if you've just had brake work done on the car, the brakes may need bleeding to remove some air from the brake lines. That can cause the brake fluid pressures to be unbalanced across the front to back brake pressure regulator which triggers the brake warning light. Of course you may also have a brake fluid leak, so you need to fix this problem ASAP.

I don't know about the gear shifter, but I once had a car where the brake light came on because the exhaust pipe was sagging down, I guess onto the cable for the parking break. I didn't figure it out until the exhaust fell down far enough to drag.

brake fluid low works the same light as h/brake warning light.top up should go out now!

I also own a 99 escort, haven't had any major problems, my car only has 71,000 though, check out this website it may help, also try checking your fuses, and your shifter lightbulb could have burnt out.
