LASAGNA WITH ZUCCHINI, RED PEPPER AND MUSHROOMS
Preheat oven to 350 F (180C). 13”x9” (3L) baking dish spray with non-stick vegetable spray
9 pre cooked lasagne noodles
1 tbsp veg oil
1 ½ tsp crushed garlic
1 c chopped zucchini
1 c onion
1 c diced sweet red pepper
1 c sliced mushrooms
2 c tomato sauce
540 mL (19 oz) crushed tomatoes
1 tsp dried basil
1 tsp dried oregano
1 ½ c 2% cottage cheese
½ c 2% milk
½ c grated Parmesan cheese
8 oz shredded mozzarella cheese
In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.
Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.
Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.
Pour remaining sauce over top; sprinkle with mozza cheese.
Bake, uncovered, for 30 minutes or until hot. Let stand for 15 minutes before serving.

This recipe is so simple and easy. If you want to use a different sauce go a head. I use what ever I have. ************Quick and easy Lasagna 2 containers (15 oz.ea) ricotta cheese 2 cups shredded mozzarella cheese (about 8 oz.) ½ cup grated Parmesan Cheese 2 eggs 2 jars (1lb. 10oz each) Ragu Old World Style 12 uncooked lasagna noodles 1. Preheat oven to 375. In bowl, combine ricotta cheese, 1 cup mozzarella cheese, ¼ cup Parmesan cheese and eggs. 2. In 13x9 inch baking dish, spread 1 cup pasta sauce. Layer 4 uncooked noodles, then 1 cup pasta sauce and ½ of the ricotta cheese mixture; repeat. Top with remaining 4 uncooked noodles and 2 cups pasta sauce. 3. Cover tightly with aluminum foil and bake 1 hour. Remove foil and sprinkle with remaining cheeses. Bake uncovered an additional 10 minutes. Let stand 10 minutes before serving. Serve with remaining pasta sauce, heated. * or use 1 jar (2 lbs. 13 oz..) Ragu Old World Style Pasta Sauce. VARIATION: For a twist on classic……. Add 1 lb. ground beef or sausage, cooked, to Pasta Sauce. NOTE: Recipe can be halved. Bake in an 11x7 inch baking dish 1 hour. Continue as above, omitting last 10 minutes of baking.

Quick and Easy Lasagna
1 24- or 26-ounce jar pasta sauce
1 18-24-ounce refrigerated large cheese ravioli
1 10-ounce box frozen chopped spinach, thawed and excess water squeezed dry
1 8-ounce bag shredded mozzarella
1/2 cup (2 ounces) grated Parmesan
Heat oven to 350° F.
Spoon a thin layer of sauce over the bottom of a 9-by-9-inch or 11-by-7-inch 2-quart baking dish. Cover with a single layer of ravioli. Top with half the spinach, half the mozzarella, and a third of the sauce. Repeat with another layer of ravioli and the remaining spinach, mozzarella, and half the remaining sauce. Sprinkle with the Parmesan. Cover with foil and bake for 25 minutes. Uncover and bake until bubbly, 5 to 10 minutes more.

Ok, I make this lasagna about once a month or so- my family loves it and it makes enough for us to have 2 full dinners (3 of us) and lunch one day for work. It must be good or else we wouldn't be eating it for 2 days straight! =) It's very easy to make, not complicated at all. I even made it for my in-laws and they loved it. (So it's at least 9 (big) servings or 12 (smaller servings!)
INGREDIENTS
1 1/2 pounds ground beef
1 teaspoon minced garlic (save yourself, by the one in the jar)
1 (28 ounce) jar sausage/peppers flavored spaghetti sauce
1 (28 ounce) jar favorite tomato spagetti sauce
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano
1 tablespoon olive oil
4 cloves garlic, minced
1 small onion, diced
8-10 ounces package mozzarella cheese, shredded
1 (15 ounce) container ricotta cheese
2 eggs
1/4 cup milk
1/2 teaspoon dried oregano
9 lasagna noodles
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a skillet over medium heat season ground beef with 1 teaspoon garlic and oregano. Brown the meat and drain.
In a large sauce pan add spaghetti sauces, tomato sauce, and oregano; set aside.
In a skillet heat olive oil. Saute garlic and onions for about 5 minutes. Mix sauteed onions and garlic with meat into the sauce and cook for 15 to 20 minutes.
In a medium bowl mix ricotta cheese, eggs, milk, and oregano.
Layer a 9x13 inch baking pan with just enough sauce to cover the bottom of the pan. Cover the sauce with a layer of lasagna noodles. Cover with sauce, then with ricotta mixture then sprinkle with mozzarella; repeat layering. Finish with a layer of noodles and remaining sauce. Sprinkle with parmesan cheese.
Bake covered in a preheated oven at 375 degrees for 30 minutes. Uncover and bake for 15 minutes.
I find that if I take a little spoonful of the ricotta mixture and kind of just "splat" it on there, it sits better than trying to smooth it in. And it's fun! =) Oh yeah, and buy good noodles- like Barilla. The off brands just don't cook right and end up chewy. Also, prego sauce doesn't taste as well in lasagna as francesco renaldi and ragu's.
I hope you enjoy! Serve with some yummy garlic bread and a salad and you should be more than full after dinner!

Quick & Easy One-Step Spinach Lasagna
Seve time with no-boil lasagna noodles, bottled tomato sauce, and frozen spinach-all processed "fast" foods that are good for you because they still supply plenty of essential vitamins.
3 cups part-skim ricotta cheese
1 cup grated Parmesan cheese
1 large egg
4 cups bottled chunky tomato pasta sauce
12 oven-ready, no-boil lasagna noodles (from 8-ounce package)
2 boxes (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese
1. Preheat oven to 350 deg F. Coat 13 x 9 x 2-inch baking dish with nonstick cooking spray.
2. In medium bowl, stir together ricotta, Parmesan, and egg.
3. Spread 1 cup pasta sauce over bottom of baking dish. Arrange 3 lasagna noodles side by side in dish. Spread 11/4 cups ricotta mixture over top of noodles. Top with a third of the spinach. Repeat layering two more times with sauce, noodles, ricotta mixture, and spinach. Top with remaining 3 noodles. Spread remaining 1 cup sauce over top. Gently press lasagna noodles down into dish, so sauce comes up aroung sides. Cover dish with foil.
4. Bake 35 minutes. Uncover. Sprinkle with mozzarella. Bake until cheese is melted and filling is bubbly, about 10 minutes. Let stand 10 minutes before cutting into rectangles.
Ideas
You can make one-step lasagna with other favorite ingredients too. Just follow the recipe above with a few changes:
* Use 1/2 pound sliced pepperoni sausage and 1/2 pound sliced mushrooms for the spinach layers
* Use frozen chopped broccoli and some diced ham for the spinach layer and substitute shredded Jarlsberg for the mozzarella

1 lb. ground beef

Repeat layers TWICE, beginning and ending with pasta. Top with remaining meat sauce; sprinkle with remaining 1/2 cup mozzarella cheese and additional Parmesan cheese, if desired. Cover with foil.
Bake 45 minutes or until hot and bubbly. Remove foil; bake about 10 minutes longer, or until lightly browned. Let stand 10 minutes before cutting. 10 to 12 servings.
The oven ready pasta you can buy will save you some cooking time and will taste the same. Try it.

I have the easiest recipe ever : Go to your local supermarket, go to the frozen food section, and get a family size lasagna. There are all different types, from 3 cheese to beef lasagna. It is so easy to make, all ya do is take it out of the box and bake for 60 minutes. These are fast, clean, and taste better than any homemade.

I did not plan on posting, but after reading what you have been given... gosh. I'll pitch in.
Go classic. Totally classic.
you need for 4X
lasagnas - a few sheets (the dry ones are fine, from the supermarket)
Parmesan - 2 cups, one for the bechamel, one to sprinkle
Meat sauce (make your own with olive oil, sizzle an onion in the oil with a minced carrot, brown in there1/3 pound ground beef, add 1 large can of tomatoes 16 oz. add either 1/2 quart of broth or 1/2 quart of milk, simmer 2 hours mixing often. add salt pepper if needed. best meat sauce ever, should be still quite liquidy to cook the lasagna)
Bechamel - 2 spoons butter in glass bowl, melt in microwave. Add 3 spoons of flour, mix well. Add slowly 1/2 quart milk, avoiding to make lumps (liquid must be absorbed before you add more). Put in microwave on high for 3 min, stir. re-mike 2 min, stir. re-mike 2 min, stir - it should be thick (if it isn't, re-mike). Add salt pepper nutmeg, and I also like to add 1 cup cheese, mix well.
Now you layer: take a pan, put a couple of spoons of sauce and of bechamel, add the dry lasagna on top. 2 spoons of sauce on the lasagnas, sprinkle generously with parmesan, more lasagna. continue with the layer and finish your ingredients, then top with a thick layer of bechamel. Hop in the oven at 300 F for 40 min (or until browned).
You can easily double or triple. It also freezes well.

You've already got two good recipes there. I just want to emphasize that the no-boil lasagne noodles (Barilla is one brand) are great. They cut several steps and a lot of time from your work. They also have decent recipes on the box. Good luck!

I'm not going to post a recipe but I'll give you a tip: find a pasta store in your area that sells fresh pasta and use that. It will make an unbelievable world of difference and it's usually pretty cheap...the one I go to is around $3.00-4.00/lb.
