Ha! you don't boil sashimi.... Anyway, I've seen a doc where the lobster is chopped to pieces live and straight into the deep fryer(meet&shell included)

Take a Chef's knife and place the tip just between the lobsters eyes (on a cutting board). Stab straight down thru the head and then chop down to make a straight cut between the Lobbies eyes.
Then, I like to cut the entire Lob in 1/2 and grill it. Meat side up on meduim heat until it looks done. While cooking you can brush on a little butter, salt and pepper mixture (melted butter). Turn the lobster meat side down for to get some nice grill marks. Sprinkle with Cilantro and serve.

We (Chinese) have different ways to cook lobsters (especially the fresh, moving one)
1) Seperate lobster (weight 2 lbs up) head and tail, chop the tail in big pieces (meat still with the shell), drain well & sprinkle some cornstarch on the flesh side, then deep fry the lobster pieces in peanut oil (or corn oil) for 2 minutes or till golden and 60% cooked
2) Heat some oil on wok over high heat, stir fry some garlic and ginger then add 1 cup of chicken stock, seasoning with salt, sugar and soy sauce, put lobster pieces in wok, stir fry quickly, reduce heat, cover wok and cook for another minute. Add chopped green onion, turn off heat and serve on plate. Garnish the dish with some chopped corianda
Here is another recipe which change the seasoning by adding butter & cream cheese

When we have lobster sashimi, we would keep the lobster head for preparing rice congee (simply chop the head in big pieces and cook with plain rice congee, add salt and white pepper to taste)

Boiling seems to be the popular way to cook lobster, But not in this house. I prefer it cooked over a grill (with shell still on) and buttered one the meat side during flipping. Comes out very tasty and has that Grilled taste that a lot of people like. Also, it comes out less "wet" as it would from boiling.
Bakeing lobster is also popular.

We don't eat the whole live lobster (but if we did it's much more humane to sever the spine before dropping into boiling water!) The tail is the best part and my husband loves filet steaks with lobster tail. They are the best split down the back (with a heavy chef's knife or a cleaver), spread them open so the meat is exposed and broil. I brush with butter before putting them in the oven. Then dip in garlic butter or, drawn butter, and eat.

No need to boil first for sashimi. if it is boiled,it is no longer called sashimi.
I love sashimi lobster. In chinese restaurant, we can order a lobster with 2 dishes. First dish is lobster sashimi acompanying with salmon sashimi. Then, the deep fry the head and shell (with some meat) with spices. Yum!
If we order sashimi in Japanese restraurant, we can ask the chef to cook miso soup with the lobster head... very nice soup, it has all the flavours in one bowl.
