I made my brownies thinner than usual but they were soft and moist, like bread! How do i make it a bit drier and TIGHTER? Should i add more egg or less egg? More sugar or less sugar? More butter or less butter? Brownie experts please help! And while you're at it, could you maybe please give me your (plain) brownie recipe? Just plain normal brownies with no special toppings or ingredients. I'd like to try it out with different recipes :)

Add more flour for a stiffer mix.

Your oven is not calibrated. Get an oven thermometer and try it again, Here. Try this:

Ingredients

2eggs
2/3cupsflour
3/4cupssugar
1teaspoonvanilla extract
1/4teaspoonbaking powder
1/2cupbutteror margarine, melted
1/4teaspoonsalt
3/4cupsghiradelli chocolateground
1/2cupwalnutschopped
Directions

Heat oven to 350F degrees. Using a spoon, stir eggs
with sugar and vanilla; add butter. Sift ground chocolate
with flour, baking powder, salt. Stir into egg mixture;
add nuts. Spread into greased 8 or 9 inch square pan.
Bake at 350F for 20 to 30 minutes. For extra chewy
brownies, use 8 inch pan and less baking time. For cake-
like brownies, use 9 inch pan and longer baking. Cut into
squares.

Baking is pretty much an exact science and you should follow the recipe. They were most likely too moist because you used too much liquid or too many eggs.

Here's my basic brownie recipe:

6 tablespoons unsweetened cocoa powder
1/3 cup vegetable oil
1 cup white granulated sugar
2 eggs
1/2 teaspoon vanilla
3/4 cup self-rising flour
1/2 teaspoon salt

1. Heat cocoa powder and oil in saucepan over medium low heat, stirring constantly until cocoa is well incorporated and smooth. Remove from heat.
2. Mix in sugar, eggs and vanilla until incorporated but don't overbeat.
3. Stir in flour and salt until incorporated, but don't overbeat.
4. Place batter in a greased 9 inch baking dish and spread out evenly.
5. Bake in a 350 degree F oven for 25 minutes. Cool slightly.

Most all brownie recipes call for oil, I'm assuming yours does too. Use less, it's the thing that makes them really moist. Still use some, of course...but you should be able to take out a bit, and experiment until you've got the perfect amount.

If you are cooking from a mix, the instructions make a few suggestions for chewy and drier cake like brownies, if you are making them from scratch, the altitude you are cooking in can also contribute to alterations in the recipe and even to the cooking time. Have fun and enjoy those brownies!

add a little more flour. i make them from the brownie mix that u buy at the store. they are better that way. try the hershey brand with the chocolate chunks

if you add extra egg it will make them cake like (puffy not gooey)
