Both are equally healthy. If you opt for the dark meat you will consume more calories and fat but not as much as a fatter cheeseburger. There are soups, pasta dishes, burgers and all kinds of dishes to make. If you choose the 97-99% lean variety, you may need to add a little something for moisture. try this recipe

Turkey or Chicken burgers
1lb lean turkey/chicken
1/4 cup egg substitute
chili powder
2- tsp teriyake sauce
1/2 cup breadcrumbs

shape into patties
grill until well done on med heat
top with swiss or provolone.
pepper

Chicken and turkey are the most commonly eaten birds and, as with beef, can be high in fat or relatively lean. Light meat, such as the chicken breast, has less fat than the dark meat, such as the legs. In fact, chicken breast is the leanest part of the chicken. Skinless white meat is the leanest choice for poultry, followed by skinless dark meat and white meat with skin (which have about an equal amount of fat), and dark meat with the skin is the highest in fat. The skin makes a big difference in fat content.

Many people have the misconception that ground turkey is better (as in lower in fat) than ground beef. Once again, this depends on a few factors. Ground turkey can be as high or higher in fat than ground beef because sometimes turkey is ground with dark meat and/or with skin. In order for ground turkey to be lower in fat, it should be ground turkey breast, without skin.

Also note that self-basting varieties of whole chickens or turkeys are higher in fat because they are injected with fat. Baste the bird yourself to reduce fat.

Processed meats, regardless of which meat is used is not necessarily “better” as in healthier. Cold cuts or hot dogs, whether from pork, beef, chicken, or turkey can have similar calorie and fat content, unless specifically marked as reduced fat, low fat, or a percentage fat-free (ex. 95% fat free). Check the labels to make sure you are getting a lower fat and/or calorie product if that is what you are looking for.
