when i was in europe people around would eat what looked like a soft boiled egg in a special holder and they would dip their bread in the yolk. what is that called?

That's a soft boiled egg in an egg cup. And when bread is dipped into the yolk we call it egg and soldiers.

Another possibility is that they were eating 'Coddled' eggs. These are cooked in an 'Egg Coddler', which is a small glass, ceramic, or porcelein jar with a screw-on lid. Online cooking stores, (Williams-Sonoma) carry Egg Coddlers.

You put a pat of butter, 1-2 eggs, and 1-2 Tbls of heavy cream in the Egg Coddler and screw on the lid. Place the Egg Coddler in a pan of boiling water that reaches half way up the side of the Egg Coddler. Leave in the boiling water for 10 - 12 minutes, (depending on how soft or hard you like your eggs).

What is especially nice about coddled eggs is that the egg coddler retains the heat, so you eggs stay hot all the way through the meal.

The eggs cook, the cream 'coddles', and the butter melts. They are delicious. I actually had Coddled eggs this morning.

its the same as eating a sunny side up egg.. the yolk is just not set (still runny).. some folks like this and enjoy dipping toast bits into it.. like the other poster explained, there are little egg cups that support the lower half of the boiled egg, which is soft boiled.. the yolk is runny.. (I wouldnt advice this nowadays with bird flu and salmanela bacteria around.. things just arent as clean as they were years ago.. cook those eggs through and through

It is a soft boiled egg, you don't need the fancy holder to eat them either. If you want to make them yourself, you boil a pain of water and put in your egg or eggs, and time them for 3 minutes. Then cool them quickly and just enough so you can crack them and peel them without getting burned.

It is really common in England I thought, but when I ordered, is nearly hard boiled.

You can get egg prepared like this in Singapore too. What they do is they give you the eggs, you crack into the saucer and put white pepper and dash of soy sauce and enjoy with toast. Then, they will pull coffee into the saucer and drink the coffee. Do not ask me why but they do it...hahahhaa
