NO PROBLEM, it happened with me so many times so now I am expert to make gravy without dripping, and tell you the truth i like to make gravy this way coz the dripping has so much fat in it. i always keep at home MAGGI or KNORE , Chicken or Beef Stock (Broth) Cubes. They are really v good. Here is the recipe for u.

Onion 1/2 Cup chopped
Flour 3 Table spoons
Oil any type 6 Table spoons
MAGGI
or 2 Cubes BEEF
KNORE
Water 3 Cups

Method
1. Heat oil and fry onion on slow flame. when it starts
turning Golden,(be careful)
2. Add FLOUR in fried onions and on slow flame fry it for
1 or 2 minutes.
3. Now add STOCK CUBES (broth) and WATER and
KEEP STIRRING. cook on slow flame 15 minutes.
4. PUT it in blender’s JUG and BLEND it on high SPEED,
Pour it in serving dish or if it looks thin put it back in
pan and cook and serve it.
NOTE:
I am expert in cooking so mostly i don’t measure ingredients i measure with my pinches and hand. You can add more flour or STOCK CUBES, or WATER or Onion. Its all up to you. GOOD LUCK

There are a number of things you can do to make the gravy. You can add water, bouillon cubes, soup mix, or Au Jus mix. If you don't like any of these choices make an onion gravy it will go good with the meat you are cooking. I hope that I have been of some help to you.

Add more water to your roast and cover with tin foil
Then find,
Bullion Cubes or Mushroom and Onion Soup Mix.
The Mushroom and Onion Soup Mix is very good seasoning for beef roast.

beef boullion with roux
remember 1 cube of boullion need 2 cup of water for broth.
roux is made of butter and flour- i think is 1 cup to 1 cup
or
fry some shallots, pour some masala wine or red wine or port and simmer till thick and switch off fire.....slowly stir in cubes of butter (one at a time) until is rich and coat the wooden spoon

do you have any beef broth or beef bullion cubes? If so add them to the bottom of your roaster pan (mix the cubes with water first).
If not if you have bacon, dice it up and put it in the bottom of your pan. After it gets good and brown it will make a good gravy.
good luck!

You can use a good quality vegetable oil or shortening as a substitute for the drippings and add 2 teaspoons Worcestershire sauce, 1 teaspoon garlic powder and 1 teaspoon onion powder.

I think you mean "drippings" ... heat some broth (beef, chicken, etc.) in a pan .. .whick in some flour .. add some dried thyme, and fresh black pepper.
