Ingredients:
2 cups Japanese Short-Grain Rice
2½ cups Cold Water
4 tablespoons Rice Vinegar
3 tablespoons Superfine Sugar
2 teaspoons Salt
Preparation:
Place rice in colander, rinse thoroughly with water until the water runs clear. Drain well (up to an hour).
Place rice and cold water in medium saucepan bring to boil over medium heat.
Coversaucepan, turn heat down to very low, cook for 15 minutes without removing the lid.
Turn off heat, allow to stand additional 10 minutes, still covered, spoon rice into large bowl.
Mix vinegar, sugar and salt in small bowl until the sugar dissolves, then drizzle over the rice.
Mix gently to coat the rice with the sushi vinegar.
Set aside to cool to room temperature.
Keep the rice covered with a damp cloth at room temperature until ready to make sushi. Do not refrigerate.

INGREDIENTS
2/3 cup uncooked short-grain white rice
3 tablespoons rice vinegar
3 tablespoons white sugar
1 1/2 teaspoons salt
4 sheets nori seaweed sheets
1/2 cucumber, peeled, cut into small strips
2 tablespoons pickled ginger
1 avocado
1/2 pound imitation crabmeat, flaked
DIRECTIONS
1. In a medium saucepan, bring 1 1/3 cups water to a boil. Add rice, and stir. Reduce heat, cover, and simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and salt. Blend the mixture into the rice.
2. Preheat oven to 300 degrees F (150 degrees C). On a medium baking sheet, heat nori in the preheated oven 1 to 2 minutes, until warm.
3. Center one sheet nori on a bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on the sheet of nori, and press into a thin layer. Arrange 1/4 of the cucumber, ginger, avocado, and imitation crabmeat in a line down the center of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
4. Cut each roll into 4 to 6 slices using a wet, sharp knife.

Actually you could put almost everything in sushi. Why don't you try soy sauce pork or chiken. It's korean style.
Use 200 gram of minced chinken or pork.
1-2 tbs of olive oil/ veg oil.
1 tbs of sesame oil.
2-3 tbs of soy sauce
1 teaspoon of sugar.
Stir fry the meat in a pan. When it seems to be all done, out all other ingredients into the pan. Mix it well. Try to separate the meat as much as possible. Leave cool and use it as sushi filling.
Other one should be pure avocado. just chop avocado into stripe, use as filling. With soy sauce is the best.
Try it and you will love it.

i am getting tired of sushi altogether- $50 per person for mostly rice- i do the chirashi- and don't eat all the rice
