It is impossible to count. Even John the Beloved Disciple of Jesus said: (John 21:24,25).
21:24 This is the disciple who testifies of these things, and wrote these things; and we know that his testimony is true.
21:25 And there are also many other things that Jesus did, which if they were written one by one, I suppose that even the world itself could not contain the books that would be written. Amen.
But actually the greatest miracle is that He has changed my life completely plus many others around the world, from rebels and unbelievers and trangressors of His Commandments to obedient servants by His grace and power of His blood. Regardless of what blasphemers and unbelievers say, the Bible declared that there will be innumerable crowd from all over the world and all nations that will be counted as winners and victors through His miraculous power: (Revelation 7:9-15)
7:9 After these things I looked, and behold, a great multitude which no one could number, of all nations, tribes, peoples, and tongues, standing before the throne and before the Lamb, clothed with white robes, with palm branches in their hands,
7:10 and crying out with a loud voice, saying, "Salvation [belongs] to our God who sits on the throne, and to the Lamb!"
7:11 All the angels stood around the throne and the elders and the four living creatures, and fell on their faces before the throne and worshiped God,
7:12 saying: "Amen! Blessing and glory and wisdom, Thanksgiving and honor and power and might, [Be] to our God forever and ever. Amen."
7:13 Then one of the elders answered, saying to me, "Who are these arrayed in white robes, and where did they come from?"
7:14 And I said to him, "Sir, you know." So he said to me, "These are the ones who come out of the great tribulation, and washed their robes and made them white in the blood of the Lamb.
7:15 "Therefore they are before the throne of God, and serve Him day and night in His temple. And He who sits on the throne will dwell among them.

Thats a good, and tough, question. Many say that they are not accurate because they were written decades later. This has been disproven in multiple ways. Despite the fact that they were written decades later, they were still close enough to the original time period that the apostles would be caught if they recorded something false. We need to bear in mind that when Jesus went to a town as many as 20,000 people followed him. If the apostle claimed that 20,000 people in that village saw him and went to him, the entire village would have remembered the event. If it was recorded wrong at least one villager would have complained. There is no complaints. The apostles COULDN'T have lied because they recorded things that would not pass as lies. Second, we know that they did not forget these things because of psychology. The apostles lived in a time where oral tradition was common. This means that, instead of writing down the scriptures and stories, they simply repeated them by mouth. Psychology proves (in multiple ways) that oral tradition is very accurate. I can explain more if you wish... We also know that the skeptics and non-christians did not deny Jesus, his existence, or the events he took part of. Most of the sketics, or non-christians, said he was using 'bad magic'. They never denied that he did all that the gospels said he did. This clearly shows that these events did happen because even the critics couldn't deny it!

Cast out devils, healed the sick, changed water into wine, paid the taxes with the coin from a fishes mouth, raised the dead, fed thousands and multiplied the food... I don't really know because the end of the bible says that the world couldn't contain all the works that Jesus did.
