The vent prevents the draining water from reating a vacuum in the pipes which would othewise suck the water out of the traps.
Traps are the s shaped pipe that keep a water seal and prevent the odors from the sewer from entering the home. Odors will tavel out of the vent pipe instead as well

There are two things the system is designed for. As stated above, the u-pipe provides a liquid seal against odors from reentering the house. The vent prevents the water in the u-pipe from getting sucked out.
The second purpose is to prevent explosive regurgitation. Since the drain pipe contains decaying matter, which produces gases, the vent pipe releases the pressure that would otherwise build up and push the water in the u-pipe back up into the toilet and release gases into the house. A corollary function is that if the sewer backs up, the water in the u-pipe doesn't backup into the toilet.

It prevents the water in the trap from being sucked down the drain. The water in the trap prevents sewer gases from entering the dwelling which are noxious and can be inflammable.
