It seems to me over the past two or three years bread and most baked products have changed in such a way they are gooey when I chew them. Is it just me or do others feel the same way? I suspect they are using a different type of wheat.

it could be the yeast or probably it maybe going bad (stale)- often your breads and baking products are made in another city that is far away and shipped to where you live. Also most breads or baked things have loads of preservatives, like Wonder bread, so that they can have a higher moister content which feels more gooey. Perhaps it could be that sour dough bread is naturally chewy. I think I need more information about your bread to give a more accurate answer. (i.e. Are u eating the same brands?)

But no my bread does not seem to be worse.

Nothings as good as it used to be.
just think how terrible it'll be in 10 yrs. it'll be 50% more, gooeyer, chewyer, sometimes drier, and a lot smaller
