I can't say that I have ever eaten cornbeef with any type of side dish, however, I have eaten it as a mixture. When I was a child, my grandmother would always make a wonderful dish using a combination of corned beef, cabbage, and potatoes (served over rice). It may sound like a lot going on in one dish, but it was delicious.

Funny question, why does everybody assume the it hasn't been cooked yet and you're getting ready to prepare the dish. Anyway if that's the case then everybody get's a thumbs up, myself knows there will be left overs and a couple slices of Rye bread and mustard sound about right with a side of ColeSlaw and a Big Dill pickle, a few potato chips doesn't hurt the cause either

In Australia We have an old, albeit very simple meal served (traditionally) around drovers (sheep and cattle herders) camp fires and as the Sunday Lunch in shearing sheds.
Simply serve freshly boiled corned beef ( don't forget to put a couple of onions into the pot) with boiled potatoes, boiled cabbage and boiled carrots served with white sauce and damper (bush oven baked bread)with butter, that's it. Real 'blokes tucker' washed down with either cold beer, or 'billy tea' (tea boiled in water and served without milk, cream or sugar). Trust Me, it's about the most authentic 'outback' meal You can make.

roasted new potatoes; quarter, boil and toss in olive oil, rosemary, cracked black pepper and kosher salt, spread out on a baking sheet and roast in 425 oven for about 20-30 min, till golden.
Serve with some cooked greens, like spinich or kale; saute some onions in oilve oil, when just done, add greens, a 1/2 cup of broth (cornd beef juice or chicken broth) then throw a lid on it to steam the greens.
serve with crusty rolls w/butter and have whole grain mustard handy for the beef and greens.
dark irish beer Guinnis, Murphy's or a dark English beer like Newcastle.

I work at arby's and everyone says we have the best reuben sandwich...use 2 slices of rye bread. Spread 1000 Island dressing on each slice of bread then add 4 oz of corned beef and a slice of aged swiss cheese and 1 oz of saurkraut. Hope u love it...

Braised cabbage and boiled potatoes tossed w/ butter and
parsley.
Cornichons, whole grain mustard and horseradish are classic garnishes.
BRAISED RED CABBAGE
1/4 cup (1/2 stick) butter
1 2-pound head of red cabbage, quartered, cored, very thinly sliced (about 14 cups)
1/2 teaspoon (or more) salt
3 tablespoons dry red wine or hard cider
1 tablespoon red wine vinegar or apple cider vinegar
Melt butter in heavy large pot over medium heat. Add sliced cabbage and 1/2 teaspoon salt; stir and toss constantly until cabbage begins to wilt, about 7 minutes. Add red wine or hard cider and sauté until liquid evaporates, about 10 minutes. Add red wine vinegar or apple cider vinegar; stir constantly until cabbage is tender and turns bright fuchsia color, about 13 minutes longer. Season to taste with pepper and more salt, if desired. (Can be prepared 1 day ahead. Cool slightly. Cover and refrigerate. Rewarm, stirring over medium heat, before serving.)
Makes 8 servings.

In my family we always ate it with mash, cheese & pickles, and by that I mean chutneys, picallili, pickled onions etc not gherkins/dill pickles.
But it depends what sort of corned beef, the American version (what we in the UK refer to as salt beef) or the UK version
