Friday and Sunday are your two most expensive days to travel. Some fares require a Saturday stay, but those seem to be fewer and fewer. The best days to travel price and capacity wise is Tuesday, Wenesday and Saturday. Business travelers leave Monday, return Thrusday and Friday and your leisure travelers leave Friday and return Sunday leaving Saturday as a pretty light day, so the discount fares stick around longer for those days.
Granted it also depends on if there is an event in that city or holiday. Those will over ride any day of the week.

From what I have experienced in the past, it is best and cheapest to fly on Tuesday, Wednesday, and Saturday.
