I like roasted red peppers, red onion, lettuce, tomato, avocado, grilled chicken breast, pepper jack cheese toasted on my whole grain bread, black olives and grilled mushrooms. I put just a little salsa on my sandwich. I enjoy!
Another sandwich I really like is a raosted veggie sandwich. I roast eggplant (sliced thin) red onions,red peppers, mushrooms, tomato, Brush veggies with a little olive oil and sprinkle with garlic powder lightly. Roast veggies till soft. I put veggies on toasted whole wheat submarine sandwich rolls and top with a slice of Provolone cheese and sprinkle with Parmisian cheese. Put under toaster oven til cheese melts. Really good!

My favorite is right off the grill. Blackened chicken breast, sliced thin, topped with sundried tomatoes and some provelone cheese. Microwave for 45 sec's or put under the broiler to melt the cheese and release the flavor of the tomatoes. Put on sourdough bread, with a little mayonaisse, and brown in the skillet with a little butter spray. Slice into 2 triangles and serve with a cold beer and chips.
Also love a spicy shrimp sandwich, usually made with leftover grilled shrimp from last night's BBQ. Add habanero or louisiana hot sauce and then heat up. Put it all on a hoagy roll, add lettuce and tomato. Mmmmm.

A local deli used to make a great vege sandwich
cream cheese, sharp cheddar, thinly sliced red onion, sliced green pepper, sliced cucumber. I loved is on pumpernickel - a great sandwich.
Most unusual thing I ever had on a sandwich was thai peanut sauce on a chicken salad sandwich. It was actually very good.

I love thinly sliced baked ham on a wheat wrap with melted mozzerella cheese, lots of lettuce and some shredded carrots....yum!
The most unusual sandwich that I have made and like would probably be scrambled eggs, salsa, melted mexican cheese blend on a whole wheat wrap...it is awesome!!

I was surprised to discover that ranch dressing, a chicken patty, thinly sliced apples and thinly sliced cucumber make a very tasty sandwich! I was trying to find a way to enjoy the chicken nuggets I was eating with the children I work with... and voila!
For "regular" sandwiches, I find that thinly sliced red bell peppers always make boring old deli meats and cheeses taste much better.

I love me some white-trash comfort sammys:
My first favorite-
Fry up two thick slices of hickory smoked SPAM, put on white bread with crunchy Romaine or Ice Burg lettuceand Miracle Whip.
My second favorite:
Oscar Mayer bologna w/Kraft American cheese, Miracle Whip, yellow mustard, romaine or ice burg lettuce on white bread.
My favorite gourmet sandwich (this was at a local french bistro, then they got rid of it...havnt been back since):
A grilled sourdough panini, filled with poached salmon, brie cheese, capers and thin sliced red onions and tomatoes.

I like to put ham, pepperjack cheese, green bell peppers, black olives, pepper, and mustard on toasted bread (various types of bread will work).
...The "unusual" sandwiches I've made haven't turned out to be scrumptious....The sandwich I stated above passes as gourmet.

I haven't made anything odd....my usual is smoked turkey, cheddar cheese and lettuce. Sometimes with cucumber chip pickles.
Oh I have put cucumber chips and ketchup in my sandwich and liked it. However I don't eat it very often.
I do like buttered corn in a sandwich.
