Yes you can eat it but it's on it's way to being bitter because the moisture is being wicked out of the bulb, In a dry place it will keep about 2 weeks

Sprouted garlic is perfectly safe but it is no longer at it's prime. The part that is green tends to be on the bitter side and the rest of the garlic is weaker. You can through it away and by more, or if you are like me, hate to waste food, and don't mind a tiny bit more work, then go ahead and use it. If you are going to use it, remove the green part (comes right out if you slice it down the middle) and use more garlic then the recipe calls for.
If you still have some sprouted garlic then you want to put it in a dry place and use it up soon. When the garlic starts to get brown spots on it, it's time to get some new garlic.

I just cut out any green sprouts, like others have mentioned.
One thing I found out though that I didn't know is that how quickly garlic will last depends on the time of year as well as storage conditions. During those times of year, I try to buy fewer at a time so that too many won't sprout, etc. at one time.

Your garlic's on the old side. It's starting to sprout so it might be more bitter. You can eat it, but cut out the green shoot which is bitter (usually from the chlorophyl that's developed in the shoot. Or as is mentioned above, you can plant it and get more garlic.

Your garlic is old. It has sprouted. You can now plant it in the garden and it will come up in the spring as more garlic. Can you still use it? Yes but it will not be as pungent as fresh garlic. Garlic should be kept in a cool dry place like the food saver section of the fridge.

yes you can use it but better if you get a small tall pot and just plant . keep it in your kitchen in a sunny window and in a few weeks you'll have fresh garlic whenever you need it. in the mean time you can buy fresh garlic in the store take it home and remove it from the skin peel it all and put in a small jar. cover it with olive oil tightly seal the lid an refrigerate it. it will last for a few months in the fridge like this.

It is safe, it just won't be as tasty. Once sprouted it's already old and likely will begin to have more of a bitter flavor. Garlic being relatively cheap, is easy to replace and I'd recommend it.

Yes you can still eat it. You've just kept it around long enough to pot it and grow your own garlic.
