My husband and I have just (re)started a low carb diet. Any one have any favorite recipes?

sliced grilled steak or chicken atop a salad with a dressing of oil and vinegar, salt, pepper, and cayanne pepper.

Roast beef, turkey, or ham slices with pepper jack, or munster cheese placed ontop and rolled up, with a side salad.

Quiche made with out the crust, filled with bacon, onions, and cheese.

Bacon wrapped scallops with steamed string beans tossed in olive oil and salt and pepper.

This is sort of like a tea. Its my award winning recipe and low carb. Its delicious!

2 quarts water
1 cup hulled barley
2 lemons
1/4 cup honey

Place the water and barley into a medium saucepan; cover, set over high heat and bring to a boil. Once the barley comes to a boil, decrease the heat to low and simmer for 30 minutes. While the liquid is cooking, peel the lemons, being careful not to cut into the white pith. Juice the lemons and place the juice along with the peel into a 3-quart pitcher and set aside.
After 30 minutes, strain the barley water through a fine mesh strainer into the pitcher. Discard the barley. Add the honey and stir to combine. Refrigerate until chilled.

First of all, don't start a low-carb diet. It makes absolutely no sense. The problem with carbs is just the refined flours/sugars, if you switch to whole grain/wheat, etc. and don't eat much bread (or noodles), bread just once a day, that will work. Eat vegs or fruit at every meal, too. Your problem is probably just the size of your portions, cut yourself off before you are full and drink a hot tea when you get hungry between meals & only healthy snacks, like nuts, (walnuts or almonds), that always works for me. go for it!

I don't have any favorite recipes but I just started calorie counting and there are a lot of good recipes on weightwatchers.com. I always thought weight watchers would be gross, but I love it.
