CHICKEN QUESADILLAS
This recipe makes great use of rotisserie chicken, available at most supermarkets.
Active time: 40 min Start to finish: 40 min
3 1/2 cups shredded cooked rotisserie chicken (from a 2 1/2-lb bird)
3/4 teaspoon salt
1/2 teaspoon black pepper
1 large onion, halved lengthwise and thinly sliced crosswise
2 tablespoons vegetable oil
2 large garlic cloves, thinly sliced
4oz each coarsely grated Monterey PepperJack and sharp cheddar cheese.
8 (7-inch) flour tortillas
Accompaniments: sour cream; salsa; fresh cilantro sprigs
Garnish: lime wedges
Sprinkle chicken with 1/2 teaspoon salt, 1/4 teaspoon pepper.
Cook onion with remaining 1/4 teaspoon salt, 1/4 teaspoon pepper
1/2 tsp ground cumin - optional
1/2 tsp new mexico chile powder - optional
in oil in a 10- to 12-inch skillet over moderate heat, stirring occasionally, until golden, about 6 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute, then transfer to a large bowl. Add chicken to onion mixture along with cheese.
Put 1 tortilla on a cutting board and spread 1/2 cup chicken mixture over half of tortilla, then fold other half over to form a half-moon, pressing firmly on seam. Assemble 7 more quesadillas in same manner.
Heat lightly oiled 10" heavy fry pan over med-high heat until hot, then reduce heat to moderate and grill quesadillas, 2 at a time, turning over once, until cheese is melted and golden brown grill marks appear, about 4 minutes total per batch. Transfer with a spatula to cutting board and cut in half.
Makes 8 hors d'oeuvre or 4 main-course servings.

1/4 cup Chopped bell pepper
2 Chili peppers, minced
3 Plum tomatoes, chopped
Vegetable cooking spray
8 Flour tortillas
1 cup Reduced fat Cheddar cheese, shredded
1 1/2 cups Cooked chicken
Garnish: salsa and fat-free sour cream
Preparation
1. In a medium heavy skillet saute the onions, garlic, and peppers in the 2 tablespoons chicken broth until soft.
2. Add the chile peppers and tomatoes and simmer for a few minutes more until the liquid has evaporated.
3. Add the chicken and stir well to combine.
4. Spray a cold skillet with the nonstick spray and heat over medium heat.
5. Place a tortilla in the pan and sprinkle with 1/8 cup cheese.
6. Add about a quarter of the chicken mixture and top with another 1/8 cup cheese.
7. Cover with another tortilla and cook for 2-3 minutes or until brown.
8. Flip the quesadilla over and cook for an additional two minutes.
9. Remove from the heat and cut into wedges.
10. Keep warm while frying the remaining quesadillas.
11. Serve with salsa and fat free sour cream.

For Christmas, I got one of those quesadilla machines. I have used it 5 out of 7 nights now. The kids just love it. We buy the chicken fajitas that are frozen and already cooked and we just warm them up in the microwave. We use 10 inch flour tortillas. We butter one side of the tortilla, lay it down on the machine (butter side up), add shredded monterrey jack cheese, then the chicken fajita meat, chopped up green onion, lots and lots and lots of cilantro (you can never have enough of this) and sometimes we will add an avocado and salsa. We put another tortilla on top of that, close the lid to the machine, set the timer for 4 minutes and when it gets crisp and lightly brown, it's done. Best quesadilla's we've ever had. Happy eating!

CHICKEN QUESADILLAS
12 ounces cooked chicken breast halves
2/3 cup shredded monterey jack cheese
1/4 cup finely chopped green onion
8 (8") flour tortillas
1 cup salsa
1 cup sour cream
Combine chicken and salsa in bowl. Divide chicken mixture, cheese and green onions evenly among 4 tortillas.
Cover with remaining tortillas. Heat one tortilla stack in large skillet over medium heat for 2-3 minutes.
Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining tortilla stacks.
Serve with sour cream.

Yeah come over and I'll made you one. I just cook up the chicken and add McCormick fajitas mix to the chicken, then once cooked i put diffrent cheeses on to the tortilla and add the chicken. Put onions or olives on some times i cook up thin slices of steak to go with the chicken. salsa, sour cream and all that stuff i put in small bowls.

Here you go:
Chicken Queadilla for one
2-8 inch tortillas
1/4 cup shredded cheddar cheese
1/4 cup shredded cooked chicken
1slice cooked bacon crumbled
1 green onion sliced
Lightly oil a skillet and heat oil . when hot put in one tortilla and cover with chicken, bacon, onions and cheese. Top with remaining tortilla. when one side is browned lightly, flip and brown the other side. remove from skillet.

Put chicken, onions, parsley, and cheese between two tortillas then put them in a pan and cook them till the tortilla's are slightly browner and stiff.

spread your favorite taco sauce on one side of two tortillas, add cheese to the wet side of each tortilla and add some of your fave chicken. Microwave this for 40-45 seconds. And Enjoy!!!!!!!
