we hung cinnamon sticks around the house and now that the holidays are over what can we do to keep the aroma from fading and if it's possible, restore the aroma to them?

Run them over a fine cheese grater, sandpaper, or file to roughen up the surface and expose more of it to the air. You can also chop them up and add them to potpouri.

Put the cinnamon sticks in small pan on the stove with a little water and some cloves and simmer slowly. This will be usable for another week anyway, and smells wonderful!

Restore the cinnamon smell to the sticks? Throw them away if you don't want bugs and mice. Buy some more and stir your hot chocolate with them.

I wanted fresh ground cinnamon for my pancakes. Manually grating takes too long. I am afraid to put in the food processor, as they are too hard.

probaly nothing you could try and soaking them in water it could work.
