* 2 chicken backs, 4 chicken feet and 1 chicken neck.
* 1/4 onion
* 2 carrots
* 2 garlic cloves
* 2 celery stalks
* cilantro, salt and pepper as desired
Procedure:
1. Wash chicken parts and heat the skin to get rid of the remaining feather
shafts and yellowish layer.
2. In a pot, heat the chicken and vegetables in 8 cups of water on high
flame until it boils. Once it boils, lower the flame and let boil slowly for
at least 20 minutes. Add salt and pepper before serving.

AUTHENTIC SPANISH RICE
1 tbsp. bacon drippings
3/4 c. long-grain white rice
1/2 c. chopped onion
1 garlic clove, minced
3 sm. canned tomatoes, diced
2 tbsp. tomato juice
2 c. hot water
1/2 tsp. salt
In a skillet, heat bacon drippings on medium-high. Add rice; cook and stir until rice is golden brown. Add onion and garlic; stir and cook 3 additional minutes. Add all remaining ingredients. Cook, uncovered, on medium heat for 20 minutes, stirring only once after 10 minutes. Check rice for doneness by tasting a few top grains. If rice is firm, add a little water; cover and cook 5 minutes more. Yield: 6 servings.

Its a main dish
In Puerto Rico, potato fritters with picadillo, or minced hamburger meat as a filling, are sold everywhere, as a fast food item. This is my "healthier" version:
Potato balls:
2 lbs. peeled potatoes, cut in cubes
3 tablespoons butter
1 egg, beaten
1/2 c. flour
1/2 c. canola oil
Chicken Filling:
3 chicken breasts, boiled in water till cooked; forked into small pieces
1/2 c. minced (onions, various colored bell peppers)
1/2 pepperoncillo (Italian pepper), minced
1/2 packet sazon (look in Hispanic section of grocery store)
1 teaspoon adobo (look in Hispanic section of grocery store)
2 drops habanero sauce
2 tablespoons tomato sauce
2 tablespoons olive oil
Boil potatoes in water, they should be on the firm side. Drain, mash with butter. Set aside while you make the chicken filling. Combine all filling ingredients, except oil and tomato sauce. Saute mixture in the oil, then add the tomato sauce. Cool.
Form potato mixture into 4-inch diameter balls. Poke a hole in the middle of each ball, fill with chicken mixture; reform balls.
Coat each ball with egg, then coat with flour. Fry in canola oil until golden brown.

Go to the frozen food section of your supermarket and buy some empanada dough. In the Latin American section, there is guava paste. Cut a small rectangle of paste, and a slice of cream cheese, and place it on one half of the side of dough. Fold in half, seal witha fork, and fry in oil until golden brown. Guayaba con queso is a traditional cuban recipe.
