I have several Mahi Mahi fillets in the freezer that I've had for a VERY long time, around a year, and it's in it's same packaging that hasn't been opened. Aside from heavy ice crustation, which could very well be freezer burn which means it's gone bad anyway, could it have gone bad in any other way and not be good to eat? Thanks!

Fish that has been frozen for a year, especially in a home freezer, is probably not very appetizing. If it was frozen in water it might be ok, or if it is vacuum sealed and frozen it might be ok, but I wouldn't use it. Most likely it will taste of freezer burn and maybe a bit rancid since mahi mahi is a bit oily.

If lots of largish ice crystals are present on the fish then you have had it too long. You can tell by thawing and smelling if there is freezer burn. Frozen foods keep well if properly wrapped and sealed in a zero or below freezer. Typical freezer compartment over the refrigerator is not designed to freeze cold enough to maintain quality for long periods.

"Flash freezing", eliminates bacteria from settin' in (ya' did excellent ;) ), i'm guessta'matin' 3-four months. Species of fish has a pertaining to it ~ no longer acquainted with Wahoo or Mahi Mahi aka Dorado, Dolphin, but am sure you'll get an accurate reply from a more authoritative solutions person on that. Rule of thumb, with fish, "better nontoxic than sorry" ;)...

Dolphin is not good at all after having been frozen, and if you must freeze it, should be used with about two months! Pitch your "mahi-mahi" and go catch some more!

If its freezer burnt just toss it. Why don't you defrost it and check how it smells? I think if it smells fine, and tastes fine after its been cooked then go ahead and eat it.
