The best way is to keep offering the veggies. My kids wouldn't eat veggies when they were that age but I kept putting them on the plate and eventually they became the favorite food. Brocolli, carrots and asparugus are the three they really love.
Also, we started the one bite rule. I let them tell me what they did and didn't like, but they had to taste it (chew and swallow) at least one bite before they pushed it aside. We've only had one out and out refusal once it was tasted. (Parsnips lol)

Stop feeding him anything with sugar in it. After several days without sugar, the vegetables will taste sweeter. My daughter had very little sugar until she was three, and developed a liking for veggies and fruits in this time. She is now 10, and while she eats some candy and drinks some pop, she really does like fruits, veggies, and juice. Good luck. Feeding toddlers isn't always fun.

You could mix veggies in mince meat and make your own rissoles, sausage rolls etc.You can grate or finely cut vegetable and add them to anything dish that you prepare. Alternatively , you can introduce one vegetable and small amounts at a time until your son becomes accustomed to eating veggies. Gradually use more varieties of vegetables and your son is sure to like eating vegetables as much as he likes eating meats.

Mix said vegetables with fruits, about 1 part to 1part, and slowly increase the percentage of the mixture with the veggies until it's all veggies. Worked for both of my kids.

Have him first help you prepare the vegetables and also have fun little names to go along with them. For example, Ants on a Log. Celery with peanut butter and raisins. The fact that he just ate ANTS ON A LOG is a really cool thing and he is forgetting that he just ate celery. Good luck.

Knowing that age group, the best way to get him to eat veggies is to tell him that he can't have them because he is too little! LOL
You can try giving him some ranch dressing or ketchup to dip them in.
You can try mixing strained veggies into meat loaf.

Trick him. Well, not really, but my daughter loves tofu in sauce, so I cut up zucchini and summer squash the same size as her tofu and mix it in. Also, she loves the dried corn from Gerber. At 17 months, I still feed her pureed veggies when she won't eat the real deal.

Cut them into different shapes. Or if he likes ketchup, try letting him dip vegetables in it. Most kids will eat anything dipped in ketchup.

CHEESE if he like cheese or make them fun some how try raw with ranch. Celery with peanut butter with raisins and tell him to get the log with the ants on it.
