There are some great on-line sites that you should take a look at.
I look at recipes on the web then copy and paste them to notepad. Then I add them to a folder called recipes. I also subcribe to a couple of sites with on-line e-mail that send to my inbox.

I have a cupboard full of cookbooks and if I had to choose only one to keep it would be the Better Homes and Gardens New Cook Book, 75th Anniversary Limited Edition (Loose Leaf). Its ISBN is 0696222507. It includes an awesome 3-ring (loose leaf) binder that lays flat when you are using it. Amazon seems to be out of these at this moment but I saw a stack at my local Walmart (and even Target I think) the other day.
Most "healthy" cookbooks feature recipies that frankly don't appeal to me. As an alternative, I suggest that you get the Better Homes book above, then buy "You on a Diet" by Roizen and Oz. It's ISBN is 0743292545 to deal with "healthy" from a holistic perspective.

Rachel Ray's 365 no repeats features 365 30-minute meals. The proportions are for four, but you could reduce the amounts. I've made about 6 things so far (got it for Christmas) and all have been easy, and actually only took about 30 minutes, as advertized. Most are quite healthy, with olive oil, beans, vegetables dominating the recipes.
A really healthy book, with recipes that range from quick and easy to complex, is the good carb cook book. Again, lots of olive oil, vegetables, whole grains. I've liked everything I tried.

Get an annual cookbook from Cooking Light. Check one out of the library to see if you like it. Or go to their website (www.CookingLight.com) to browse their recipes.
They have everything from Garden Herb Grilled Cheese Sandwiches to Chile Rellenos Casseroles to full Thanksgiving Dinners.
All of their ingredients are readily available at your market. The recipes are simple and most have 3-5 steps. And on top of that, they are healthy!

This may not suit your needs but there is a magazine called "Taste of Home" Recipes from women across the USA. Mostly using simple ingredients that the average, normal kitchen would have. It contains lots of ideas and recipes. You may not have time to search the net but they also have a web site--www.tasteofhome.com

The first book is great for a beginning cook. It's clearly written w/ good illustrations of the techniques. i've met Jacques Pepin and he's a very down to earth, genuine person which you don't always find with chefs of his stature. if you ever get a chance to see reruns of his shows with Julia Child, watch them. they're hilarious (they disagree constantly) and are proof that there is more than one right way to do things.
