Easy Famous Texas Cheese Dip

1(1-pound) package pasteurized process cheese spread,
cubed (1 1/2 packages for a thicker dip)
1 (10-ounce) can diced tomatoes and green chilies, with liquid
Place cheese, tomatoes, and jalapenos and their liquid in small heavy saucepan. Set over low heat and cook, stirring often, about 15 minutes until cheese melts and mixture is smooth, or microwave 5 minutes on HIGH in covered, microwave-safe casserole, stirring once at halftime. Serve warm with corn chips or bite-size broccoli or cauliflower florets, celery, carrot, or zucchini sticks.

ok this is as easy as it gets take 1 package of Velveeta cheese cut it into inch size blocks[use the whole box or 1/2 box depending on how much you want to make]. add 1/8 cup milk, or half n half . add 2 cans chopped green chilies and microwave it 3 minutes at a time till melted stirring in between. you can also add browned ground beef drained well. and for a change instead of chips fry some won ton wraps cut into quarters & fried till golden brown. its very good and easy. i hope you'll enjoy it. my 2 sons and husband want it all the time!

2 tablespoons butter or margarine
2 eggs
2 (16 oz. each) cans chili w/beans
1 large can hominy, drained
1 (16 oz.) pkg. Mexican Velveeta
Scramble eggs in butter. Add chili and hominy; simmer 20 minutes. Add cubed cheese, a little at a time and stir til melted. Serve warm with Fritos or tortilla chips.

velvetta & rotel - melt
modifications:
easy melt cheese thats not greasy (no cheddar)
queso fresco works well.
pico de guillo
avocado
hamburger meat (browned, if you want)
or chorizo
