I have only tried a few different loaves in my machine so far, but I find them to be extremely heavy and never light and fluffy like store bought bread. I would be happy with something in between even. I don't mind the heavy course bread sometimews but would like to have an arternative.

It may be the brand of mix you are using, and if not using a mix, the freshness of yeast.

What produces the lightest bread with the best structure when you bake by hand is kneading, which develops the gluten to hold a good rise. I have had some excellent bread machine bread, and it has normally been from a mix.

It's bread machine bread. You pull it out and it has a hole through it from the machine that spins it around. It is heavy because you just stick it in the machine, and it does the whole thing for you, but doesn't do a good job. It also could be the recipe you're using. You should try to make non-machine bread (Doesn't include banana or blueberry bread). I suggest trying to make white bread for a start, you might be able to find a recipe on the internet. The reason I say this is the needing. You squish it down with your hands, fold it in half, then squish it again. There may be some stuff about putting it in a covered bowl for a certain amount of minutes, doing something with it, and blah, blah blah. If you try making it that way, you will be guarenteed to have good-tasting, fluffy bread. :)

that used to happen to me alot to. the problem is you never place the exact amount of water in the bread mix as advised on the packet. add a little more water. otherwise it is hard, heavy and dry.

Use some glutien and add a little more yeast.
