Taco Casserole:
Brown hamburger & drain, mix in a few chopped onions if you like & brown a little more. Mix in salsa or picante sauce & let simmer.
Cook macaroni & cheese (I like Velveeta Shells & Cheese) & then mix the two together. Serve with corn fritters &/or a salad.
Mini Shephard's Pies:
Brown hamburger & drain, mix in a few chopped onions if you like & brown a little more. Add a little of your favorite barbeque sauce (don't make it too runny) & some corn. Make mashed potatoes or instant is not too bad (the Bob Evans Original, found in the meat section of my grocery is real good).
Push Pillsbury biscuits (or make your own) into cup cake tins so they form a cup.
Put some of the hamburger mix in each cup & top with the mashed potatoes & a sprinkle of shredded cheddar cheese & bake until the biscuits are brown. Serve with whatever other veggie your fam likes or a salad.
I also found out that baking a pork loin, shredding it & adding barbeque sauce & simmering for at least an hour makes the best you can get! There's this sauce I found called Stubbs with a picture (in black & white) of a black guy in a cowboy hat. It has over his head "My life is in these bottles" & underneath it says "Ladies & Gentleman, I'm a cook" I was looking for something not as sweet as we'd been using - a little more brown. It was the bomb! I got a pack of that pre-shredded cole slaw & some of that Marzetti's cole slaw dressing. We were fat & happy campers that night!

Hi, this will only work if your family likes onions and peppers, but here goes.
slice up one large onion, one large green,or red bell pepper. remove the skin from a good quality sausage and cut into pieces. Clean and slice up 3-4 potatoes, par boil these in water for 4-5 minutes. In a skillet, add the sausage and cook for 6 minutes. add onions, and peppers and potatoes. cook until pototoes are cooked through and veggies are done. You may need to add a little water or chix stock during cooking. add some parm cheese at the end.

One of my favorite weeknight recipes when I don't really feel like cooking is Chili:
1 pound ground beef
1 15.5 oz. can dark red kidney beans
1 28 oz. can diced tomatoes
1/2 teaspoon red pepper flakes
2 tablespoons Worcestershire sauce
2 1/2 teaspoons chili powder.
Brown the ground beef. Add all of the other ingredients and let it cook for 15-30 minutes. You can adjust the heat by increasing or decreasing the amount of red pepper and chili powder you use.
I like to serve it over pasta or with corn chips and cheddar cheese.

Sword fish. You basically put it in a pan, and add the seasons that you like. Put frozen spinach over it, and pour some heavy cream. Cover with aluminum and bake it in the oven at 325 for approx. 30 minutes. Serve with rice or potatoes. Bon appetite. Easy dish to make and very nutritious.

Take 2 cans godlen cream of mushroom soup, put in a pyrex oblong baking dish, brown 6 boneless porkchops, put on top of soup mix. Cover with aluminum foil.Put in 350 degree preheated oven. Bake for one hour, then add small red or white potatoes and peeled carrots, recover and bake another hour. Serve with tossed green salad and rolls. This serves 2 adults and 2 children. Adjust amount of porkchops and soup to meet your families appetites. Bon Apetit!

Fried rice is easy, and my kids will actually eat it. All you do is put on some white rice, while it is cooking scramble a couple of eggs, remove them from the pan, saute onion and garlic in veggie oil along with any other veggies you have on hand (celery carrot, snow peas, bean sprouts, broccoli), add a can of water chestnuts, about a teaspoon of salt, then put the eggs back in along with the rice (about one cup of cooked rice per person), throw in some crumbled bacon if you have it, a couple of tablespoons of soy sauce and it's done!

this is quick and easy 2 lbs smoked sausage, 2 bell peppers, 1 medium onion 1 can chopped tomatoess, 3 cans tomato sauce. 5 cups cooked rice. in a large skillet using real butter brown the sausage add the onion and peppers sliced and 2 cloves chopped garlic salt and pepper. cook till veggies are opaque. then add tomatoes and tomatoe sauce salt, pepper dried Italian seasoning, and garlic powder.cook for 10 to 15 min. serve over rice. my 11 year old love this and he hates veggies. prep time is approx. 30 to 40 min. i hope your kids will like it too! enjoy!!!!!!!

My husbands personal favorite of mine is the Tater Tot Casserole!
1-2 pounds ground beef -
1-2 cans of cream of mushroom
frozen veggies - which ever you prefer, i use green beans,peas, carrots and corn
shredded cheese - again what ever flavor you prefer
bag of Tater Tots
brown the ground beef in skillet.
Take cans of mushroom soup, frozen veggies and ground beef and mix in a casserole dish, if you are using one can of soup and a pound of beef a 2 quart should do fine. Spread out the mix until even as possible, coat with cheese, add frozen tater tots to top in rows so there are no gaps. cover casserole
set oven for 375 degrees and bake for 30-45 mins.
*personal touch - we love cheese - after the casserole is done i like to add another coat of cheese on top of the tots and let set with cover on until melted.*

kielbasa in pineapple sauce
1 kielbasa (Boar's Head if you can get it)
3 peppers (red, yellow, green)
1 can pineapple chunks
1 1/2 cups apple juice
1 tablespoon olive oil
1 tablespoon cornstarch
1 lb cooked spaghetti
slice the kielbasa into medallions (small circles), cut peppers into chunks, removing the middles and discarding all seeds and white parts
fry kielbasa up in a large frying or sauce pan with tablespoon of olive oil over medium heat, stir them around every 2 minutes for about 6 minutes
remove kielbasa to plate and throw the peppers into the pan, cook until tender about 2 minutes
add cornstarch, mix it around, throw kielbasa back into the pan and add pineapple chunks and apple juice
cook until sauce thickens, stirring occasionally
this recipe is a hit with everyone who tries it, my kids love it and so do the adults, good luck!!
